I work with a girl who claims she is allergic to wheat gluten. I haven't had the chance to ask if she has had tests done to determine if she really is allergic.
In all likelihood she is allergic to the herbicide Round Up, which can be found in flour after the milling process. She does eat gluten free bread, but that means nothing. ;)
