Does anyone have a really good old fashioned Potato Salad Recipe? I thought of this because I am currently making a batch, and I keep trying different recipes to find one that I can fall in love with. I know I'm fickle but I prefer Dill Pickles - in the salad.

"Satan / Cheney in "08" I buy the stuff at the local grocer - they have a very serviceable, Texas style (mustard, no mayo) salad that we enjoy. Otherwise, go on the web and you should find at least a million receipes to stagger through.
Ahh, a traditionalist. I was going to recommend ground glass, but that tends to be a mite gritty.

I like potato salad with a mayonnaise/mustard base, chopped hard-boiled eggs, lots of fresh parsley and dill, red onion, celery, fresh ground black pepper, maybe some tabasco, salt/vinegar to taste. I switch between dill and sweet pickles; both are great.

Our family recipe. It's always a hit. (no pickles tho ;) 6 red medium potatoes (cool in fridge or freezer in metal pan after boiling in jackets) Then add and mix together: slice hard-boiled eggs on top (optional)
remove jackets and cut up in cubes
1 tsp sugar
1 tsp vinegar
1 cup mayonnaise
1 tsp salt (mixed in w/mayo)
1 stalk celery, chopped
1 small red onion, chopped
sprinkle paprika on top

Only because I love you stupid bastards would I give you my mom's recipe. Gonna give you the quick and dirty because I'm doin' a god-awful honey-do this week for my honey. 1. Use little red potatoes (pontiacs preferably), let 'em cool, peel 'em and chill them. When they're cool, slice them fairly thin. Set aside. 2. Get a WHITE ONION. Mince. 3. Mix half sour cream and half mayo fer the dressing. Stir in onion and pepper (white pepper is best for this if you can find it. Make a GENEROUS amout of dressing for the taters that you have. 4. Carefully fold in dressing with your potato slices. 5. Let set a while in the fridge for potatoes to soak in dressing. (Overnight is good.) 6. Garnish with dill, rosemary twig or sprinkled paprika. Great with smokers, ham hocks or what have you. Chow down with loads of real cold beer. (Don't tell nobody I gave you this recipe.) Cheers.

Thank you both - that is what I was looking for. I think I'll use white onion though as the Walla Walla Sweets are in season now and I picked up a bag of them. That is what I had on hand - reds or some nearly over the hill baby Yukon Golds. I went with the red. I did add a touch of dill.

I like potato salad with a mayonnaise/mustard base, chopped hard-boiled eggs, lots of fresh parsley and dill, red onion, celery, fresh ground black pepper, maybe some tabasco, salt/vinegar to taste. I switch between dill and sweet pickles; both are great. A true cook's reccomendation - give the ingredients and leave it to me to sort it out. :-) I did go with the dill, and I am going to use some chopped up Dill Pickles. I tried something different this time based on the Allrecipes.com suggestions - I spinkled a bit of dill on and then sprinkled that with a bit of Apple Cider Vinegar (Bragg's) - now to make the final dressing and throw it together. The White Pepper sounds like a nice gourmet touch. I do have some White Peppercorns and will grind them up with a Mortar and Pestle. I am willing to bet the flavor is very complementary.

Sometimes I'll substitute Chinese hot mustard instead of regular mustard or I'll de-pith & de-seed some habaneros, liquify them in a blender with a splash of vinegar & a little salt and add a little of that.

Could be Russian: Potato Salad Recipe: Ingredients: Bunch of potatoes, preferably Maine white Hard boiled eggs Onion, chopped (or shallots) Mayonnaise: the real thing, not that soy crap Just slice the potatoes and eggs (as many eggs as you want) and add the onion or shallots. Mix-in "REAL MAYONNAISE." It's simple. Tastes exellent. My mom is Russian extraction. No Irish or Scot bitch complains; in fact they compliment.

I was thinking of trying Shallots but since I have these lovely Walla Walla Sweet Onions (the only one that matches them is the Vidalia) I used one of them. Agreed on the REAL Mayonnaise. I like a little mustard for seasoning though. Chives are a nice addition too. Lots of ways to play around with it.

Or you could have a Santa Fe Omelet: 3 Eggs beaten (salt to taste) 1/2 of a Jalapeno (Minced) 2 Tblspns Roasted Corn (Trader Joe's Fire Roasted Corn works most excellently - in the freezer case.) A Couple of strips of Onion 2 Ozs shredded Monterey Jack or Cheddar (I prefer Cheddar) Optional - a couple of tablespoons of minced ham or cooked Chorizo - shredded chicken would probably work too. Optional - a few mushroom slices browned in butter in advance Start the omelet as normal (8 inch pan works best) cooking it slowly at low to medium heat - in butter of course. Once it begins to form a skin put in the cheese, and then sprinkle the rest of the ingredients on top of that. When well set then fold, let it set in omelet form, flip once to make sure it is done and the cheese melted. Salsa, Guacamole (optional), and Sour Cream to taste as topping. Sprinkle a few pieces of chopped green onion and Cilantro on top to complete the presentation.

That's what the Salsa is for. If you want more heat you just pick a hotter salsa. You could try a nice Habanero Salsa. That ought to fire you up. OR If you want some real heat substitute half of a Serrano Pepper for the Jalapeno. You'll have to move a bit South for that.
