Does anyone have a really good old fashioned Potato Salad Recipe?

I thought of this because I am currently making a batch, and I keep trying different recipes to find one that I can fall in love with. I know I'm fickle but I prefer Dill Pickles - in the salad.

When I was a kid I would put ketchup on scrambled eggs, but gave it up at the ripe old age of 5. ;-)

Now tabasco is another matter. :-)

Or you could have a Santa Fe Omelet:

3 Eggs beaten (salt to taste)

1/2 of a Jalapeno (Minced)

2 Tblspns Roasted Corn (Trader Joe's Fire Roasted Corn works most excellently - in the freezer case.)

A Couple of strips of Onion

2 Ozs shredded Monterey Jack or Cheddar (I prefer Cheddar)

Optional - a couple of tablespoons of minced ham or cooked Chorizo - shredded chicken would probably work too.

Optional - a few mushroom slices browned in butter in advance

Start the omelet as normal (8 inch pan works best) cooking it slowly at low to medium heat - in butter of course.

Once it begins to form a skin put in the cheese, and then sprinkle the rest of the ingredients on top of that. When well set then fold, let it set in omelet form, flip once to make sure it is done and the cheese melted. Salsa, Guacamole (optional), and Sour Cream to taste as topping. Sprinkle a few pieces of chopped green onion and Cilantro on top to complete the presentation.

That's what the Salsa is for. If you want more heat you just pick a hotter salsa. You could try a nice Habanero Salsa. That ought to fire you up.

OR

If you want some real heat substitute half of a Serrano Pepper for the Jalapeno.

I want to live where guacamoles grow.

You'll have to move a bit South for that.
