(Palo) We are lucky for the hospitality of 4um, their owner, Christine, and their kind posters
I am not on email with Goldi, but another poster is and was kind enough to forward me Goldi's email
so I would know what was going on and could share it with others
It looks like we will be on 4um for a while so I want to express my gratitude to 4um for their hospitality to us
Love, Palo

Here is the email from Goldi which was forwarded on to me

We have assessed the damage and will be replacing most of the parts that run the server. The heat damaged pretty much everything.

The software may also be corrupted, and we will have to go back to our last good copy of a backup.

We may lose some of the database, so when we come back up we may lose the past few weeks of posts.

My best guess is 7 to 10 days downtime (max)

It's isn't often that life offers people opportunities to change things. As the years pass us by, the silly spats and arguments that once seemed important are long gone and forgotten. Given this moment in America's history, it's time to turn the page, move on, and in some cases agree to disagree.

Peace, and what I'd give for a corned beef on rye from Katz's delicatessen!

Katz's was about 5 blocks from where I lived in East Village
I was on First Avenue and 5th Street
Katz's is on Houston Street (which is same as 1st Street)
and one block East of First Avenue (Avenue A)
blocks in Manhattan are tiny -- so it was 5 minute walk
no one has car in Manhattan

Katz's has good knishes if you don't want a sandwich
I notice the kosher deli around corner from me in Tucson has knishes
so I bet Austin has them too

I don't know how to describe what a knish is, I leave it up to Jethro
he has genius for food

Love, Palo

A knish is a thick potato pancake fried on the outside and softer on the inside. We'd slice them in half and put mustard in the middle. Ummmmm....

The only way to eat latkes is with apple sauce.

My mom never made potato latkes
but my grandmother did
she served them with either sour cream or apples sauce, you had your choice
they were served on Chanukah
I never had them any other time as kid
they are delicious

I never had them at all until I married. My husband's family served them on Chanukah. I bought one of those salad shooters to grate the potatoes so I could make them. Power grating is the only way to go. I also use it for my carrot cake. OI, you would love my carrot cake!

Yes in Tucson my neighbor when I lived in apartments said her son was visiting and asked her to make potato latkes
she said grating the potatoes for them made her knuckles bleed
I did not know it was such hard work
I guess that is why my mom never made them
You are a great cook, FF

All modesty aside I make a pretty killer Carrot Cake myself. It helps to have a food processor - I basically pulverize the carrots and use Cake Flour. It gives it a very fine grain - not the coarse grain of most Carrot Cakes. The batter looks soupy but it bakes up just fine.
