This was actually, despite my teasing her, farmfriend's idea, and since I am a lifelong cook who enjoys good food I thought this would be a fun perennial thread.

This is a place to share and exchange recipes, tips, sources, and treats. I am sure that there is a lot of expertise just waiting to be tapped into. I threw beverages into the title because I love a good cup of coffee and so have spent a lot of time reading about, brewing, and enjoying good coffees.

My own strong areas in cooking are baking, Tex Mex, and Italian. I do not represent myself as an expert but as a someone who simply enjoys good food and is not uncomfortable in the kitchen.

As a long time Kitchen Gardener I am used to taking what I have harvested and using what I have and trying to be a bit creative. I have also learned some of things which are fun to grow and good to have for a different touch.

Molasses Cookies

¾ cup oil
1 cup sugar
¼ cup molasses
1 egg
½ tsp. salt
2 tsp. baking soda
2 cups flour
½ tsp. clove
½ tsp. ginger
1 tsp. cinnamon

Add sugar to oil, and then add molasses & egg. Beat well. Mix dry ingredients together and slowly add to first mixture. Form into walnut sized balls and roll in sugar. Bake on greased cookie sheet. 8 -10 minutes at 375. I prefer 8 minutes baking time making them chewy.

Turtle Soup

 1 Snapping Turtle

Any old soup recipe will work for (snapping) turtle soup. The main problem with turtle soup is cleaning the turtle. You have to be certain that every last speck of fat is removed from the meat before cooking. This is not too difficult because the fat is between the skin and the flesh.

To butcher a turtle you start by chopping off the turtle's head. Be careful because the head will still bite even after it is removed from the body and the body will still crawl away after the head is removed. Turtles don't die right away.

When the body stops trying to crawl away, dip it in boiling water and scrape off the exterior layer of skin, including the shell. The result will be a bright white carcus, compared to the muddy brown-green you started with.

Next step is to remove the shell. Cut along grove on each side between the front and back legs. It is the narrowest part of the shell. The tail, neck and all four legs are attached to the top of the shell. Remove from shell and you have the bulk of the meat. However, there will be some meat on the bottom shell and top shell.


It is at this point that you remove the fat. Just roll back the skin and with a paring knife and your index finger scrape out the fat.

I learned about turtles from my parents who learned from their German immigrant fathers. It has been told in family circles that my maternal grandfather would catch snapping turtles by hand. I never saw him do it because he was hit and killed by a truck when I was about nine years old. It was a big loss for me because he was just starting to teach me about turtles, wild mushrooms, dandelions and other natural things. He made the greatest doughnuts I ever ate.

Good luck with your turtle soup. Just cook it long with lots of vegetables and it will be good if you removed all of the fat. - Earl

This is the real deal. Given to me in my late teens by a Scotsman who was in his 80s. It had been handed down for generations in his family and he brought it with him when he immigrated.

Scotch Short Bread

1 ½ oz. rice flour
3 oz. sugar
12 oz. flour
½ lb. butter (real)

Put all 3 ingredients into a sifter, mix 3 times. Mix butter and ingredients by hand till soft like putty. Pat out to 3/8 to ¼ inch thick. Cut like biscuits. Poke with fork all the way through. Do not preheat oven. 325 deg. till straw color, let cool.

Zucchini Lasagna

3 pounds large zucchini, scrubbed 1 quart spaghetti sauce or thick tomato sauce 1 cup bread crumbs 1 pound ricotta cheese (more, if you like - the original recipe calls for 2 pounds) 4 eggs, lightly beaten 2 Tablespoons parsley, chopped 1/2 teaspoon each dried oregano, basil Salt & pepper to taste 1 cup grated Parmesan or Romano cheese 1 pound mozzarella cheese, coarsely grated

Slice zucchini into long slices. Cook in boiling water just until limp, about 5 minutes. Drain on paper towels.

Combine ricotta, eggs, parsley, seasoning and half of the parmesan cheese and half of the bread crumbs in a bowl. Set aside.

In a 9x13 pan, spoon a thin layer of tomato sauce. Sprinkle with a quarter of the bread crumbs. Arrange layer of zucchini over this. Spoon half of the reserved ricotta mixture on top of the zucchini. Sprinkle with half the mozzarella cheese. Arrange the rest of the zucchini over this, layer more tomato sauce and the rest of the bread crumbs and top with remaining ricotta mixture. Top with remaining mozzarella and parmesan.

Bake in a 350 degree oven for about 1 hour or until top is brown. Let stand 20 minutes before cutting.

Santa Fe Omelet:

3 Eggs beaten (salt to taste)

1/2 of a Jalapeno (Minced) (If you want it hotter use 1/2 Serrano)

2 Tblspns Roasted Corn (Trader Joe's Fire Roasted Corn works most excellently - in the freezer case.)

A Couple of strips of Onion

2 Ozs shredded Monterey Jack or Cheddar (I prefer Cheddar)

Optional - a couple of tablespoons of minced ham or cooked Chorizo - shredded chicken would probably work too.

Optional - a few mushroom slices browned in butter in advance

Start the omelet as normal (8 inch pan works best) cooking it slowly at low to medium heat - in butter of course.

Once it begins to form a skin put sprinkle the minced Jalapeno in, add the cheese, then add the rest of the ingredients on top of that. When well set then fold, let it set in omelet form, flip once to make sure it is done and the cheese melted. Salsa, Guacamole (optional), and Sour Cream to taste as topping. Sprinkle a few pieces of chopped green onion and Cilantro on top to complete the presentation.

Another possibility would be to put a couple of tablespoons of Diablo Sauce on it before the Sour Cream.

Tips for cooking with coffee

• Strong brewed coffee perks up the flavor in pot roasts, stews, chili, mole, baked beans and hearty soups.

• For fuller flavor, use ground coffee beans instead of instant. If you do use instant, make it espresso.

• When adding coffee to dishes that will be cooked, make the coffee stronger than you would normally drink it.

• To get the most coffee flavor in cookie dough, dissolve ground coffee in a small amount of liquid and add it to the creamed butter and sugar.

• To add coffee flavor to cakes, coarsely crush the beans with a rolling pin and steep them in the liquid used in the batter.

Coffee-Braised Pot Roast with Cinnamon and Ancho Chile Pepper

This recipe works equally well with lamb shoulder or shanks, short ribs and beef stew. If time permits, cook the roast ahead and refrigerate it and the cooked sauce separately. It is easier to carve the meat and remove the fat from the sauce when they are cold. Spoon the sauce over the meat and either refrigerate for up to 2 days or heat and serve. If desired, vegetables such as carrots, parsnips, rutabaga and potatoes can be added during the last 45 minutes of cooking. Serves 6.

4-lb. boneless chuck roast

For the rub

2 tsp. kosher salt

2 tsp. black pepper

2 Tbsp. ground or instant espresso

1 tsp. ground ancho chile pepper

1/2 tsp. ground cinnamon

For the braising liquid

4 Tbsp. olive oil

1 large onion, chopped

8 garlic cloves, minced

2 Tbsp. ground or instant espresso dissolved in 1.5 cups warm water

1 cinnamon stick

1 1/2 tsp. ground ancho chile pepper

1 Tbsp. packed brown sugar

1 Tbsp. butter, softened

2 Tbsp. flour

Preheat the oven to 325 degrees. Rinse the roast and dry thoroughly. Combine all rub ingredients in a small bowl and rub all over the meat.

In a Dutch oven or wide, heavy saucepan, heat 3 Tbsp. oil over medium high heat until hot. Add the roast and cook on all sides until very dark (coffee will cause it to become almost black), 8-10 minutes total. Remove the roast to a plate.

Add the chopped onion to the pan, reduce the heat to medium and cook, scraping up as much of the seasoning stuck to the bottom of the pan as possible, until the onion begins to soften, about 10 minutes. Add garlic and sauté for 1 minute. Slowly add a small amount of coffee to the pan (it will sizzle). Add the remaining coffee and cook, stirring up the remaining bits from the bottom of the pan. Stir in cinnamon stick, chile pepper and brown sugar. Bring to a simmer. Return the beef to the pan and bring to a boil. Cover tightly and transfer to the oven.

Bake for 1.5 hours, then turn the beef over, cover again and continue cooking until meat is fork-tender, but not falling apart, about 3.5 hours total. If making ahead, refrigerate meat and juices separately.

To serve, transfer the beef to a cutting board and tent loosely with foil. Remove the cinnamon stick from the braising liquid and skim the fat.

Bring the braising liquid to a boil over medium-high heat. Mash the butter with the flour to form a paste and whisk into the gravy. Simmer for 5 minutes, or until thickened slightly.

Carve the roast and serve with the gravy.

Summer Saute

The nice thing about this is that there is no set recipe and its ingredients are whatever fresh summer vegetables are available. The main elements that are constant are Olive Oil, Herbs de Provence, Garlic, Onion, and Sea Salt. And you could do without the onion, and Kosher Salt works as a replacement for the Sea Salt (although Sea Salt has more trace elements).

This was an impromptu creation at a moment when I had to figure out a quick way to feed my Aunt who was visiting (it was a somber time as my mother was in the process of passing from Cancer). Since my Aunt and I shared a love of gardening and my Kitchen Garden was in full swing I immediately thought of the garden as a source of something quick, that I could show off, and tasty.

So, quick like a bunny I ran out into the garden and began picking. Back in the Kitchen I had some Patty Pan Squash (the flattened type of Summer Squash, some Ronde de Nice - a wonderful round French Gourmet Zucchini and a big handful of green beans). Grabbing my favorite Cuisinart Saute Pan I splashed some Olive Oil in the bottom, chopped up some garlic and onion, some of the summer squash, grabbed a hand full of fresh green beans, and reached into the freezer for some frozen cocktail shrimp. Starting with the Olive Oil, then adding the garlic and onion I began sauteeing it over medium heat, once the onion was beginning to turn translucent I sprinkled a good pinch of Herbs de Provence over it, added the green beans and then some salt. The summer squash cooks quick and so it is added last so as not to over cook it. So, with the onion translucent and the beans beginning to change color I added the summer squash, mixed it in good, kept things in the pan moving and as the squash began to cook threw in the cooked shrimp and warmed them through and then served. It was delightful and I learned something in the experience - that I could fashion a quick tasty meal just from the garden and what was on hand.

I have since used different combos in the dish - matchstick carrots work well, and different types of summer squash, and sometimes a dash of wine or Balsamic Vinegar to form a glaze. It is one of those quick summer dishes to play with and enjoy creating with.

To make it more substantial serve over Pasta - either Linguine or Fettucini with just a dash of Olive Oil on it to keep it from sticking together.

For a nice change try Strawberries Romanoff. This sounds fancy and impressive for guests but is easy to make.

Take a couple of cups of Strawberries (or more - I like Strawberries), clean and remove the core, slice and mix with enough sugar to form a liquid. The amount of sugar is going to vary as you'll want to adjust it based on how sweet the berries are. Just a rule of thumb - about 1/4 to 1/3 cup sugar for every two cups of berry slices. The sugar draws the moisture out of the Strawberry slices to form the liquid. You want to do this preferably the night before so that all the sugar dissolves and it forms a syrup which is not grainy. Put the Strawberries in a bowl in the fridge over night - cover the bowl with a lid or plastic wrap. When you take it out in the morning stir it again to mix up any sugar crystals that have not completely melted into the syrup.

The morning you are serving whip up a cup of heavy Whipping Cream till it is stiff - adding sugar to taste when it is just beginning to stiffen. Whip until it is fairly stiff. Taking a rubber spatula fold the berry mixture into the Whipped Cream and use this as your topping.

Okay.

Spicy Chicken Burgers.

Boneless, Skinless Chicken Thighs.
Louisiana Hot Sauce
Blue Cheese Dressing
Kaiser Buns
Spinach
Red Onion
Medium Cheddar Cheese
Olive Oil
Butter
Organic Mayonnaise (as long as it's the good mayonnaise - It's like Ketchup - only the good stuff will do unless you're really hungry...)
Mushrooms
Salt & Pepper

Dice up the chicken.

Fry the chicken in the pan with the butter and olive oil.

Add the Hot sauce.

Chuck in the onions and mushrooms.

Add some Blue Cheese Dressing.

The Chicken etc. should be smothered in Sauce and Dressing so it's saturated and dripping with the stuff.

Heat the buns in the oven with the cheese grated.

Put the stuff on the buns with the spinach and mayonnaise.

Add extra Hot Sauce and Blue Cheese Dressing.

Oh Good Lord.

I'm no Chef, but my mouth is watering just thinking about it.

It is pretty straight foward.

A little Olive Oil for thinning (or Grape Seed Oil which has a more neutral flavor - and is high in Omega 3 fatty acids).

Sour Cream

A lemon for juice

Blue Cheese

This works best in a food processor or a blender, or one of those hand held mixer thingies.

To a cup of Sour Cream add about a teaspoon to a tablespoon of lemon juice (it depends upon how much "bite" your want from the acid) (White Balsamic Vinegar would probably work well too) and enough oil to thin it to a thick but pourable consistency. Mix the oil in a couple of tablespoons first and then one at a time until you get the consistency you want. Then add some chopped up blue cheese to taste. Mix the cheese in and taste until you fine tune it to the flavor you want. You might need to add a dash of Kosher salt (it dissolves more readily) depending upon how salty the cheese is. It's better to do this a day or so in advance to economize on the cheese - the flavor will infuse the solution after setting a while. Keep it in the fridge as it will go bad if left out - no preservatives. If you like it chunky add some pieces and fold in with a spatula after you have the dressing to where you want it.

Looking for suggestions to improve a basic waffle/pancake recipe

German Apple Pancakes

2 Large cooking apples, such as Yellow Delicious or Granny Smith
¼ cup butter
1-cup all-purpose flour
1-cup milk
6 eggs
1-teaspoon vanilla extract
½ teaspoon salt
¼ teaspoon grated nutmeg
Confectioners’ sugar

Preheat oven to 475. Peel, core, and very thinly slice the apples, you should have approximately 1-½ cups. Melt 2 tablespoons of the butter over medium low heat in a small fry pan, and sauté the apples until they are just tender, about 3 minutes. Keep warm while preparing the batter. Place a 9 or 10-inch cast iron skillet or very heavy ovenproof pan in the oven to heat for at least 5 minutes---the pan has to be very hot for this recipe to really work properly. When it is well heated, add the remaining 2 tablespoons of butter to melt and put skillet back on oven; the butter should be very hot but not brown when you add the apples and the batter.

While the skillet is heating, place the flour, milk, eggs, vanilla, salt, and nutmeg in a blender, and whiz until smooth. (This can be done with a rotary beater.) Remove the skillet from the oven, quickly arrange the warm sautéed apple slices over the melted butter, and pour the batter evenly over all. Bake for 15 minutes, reduce hear to 375 and bake 10 minutes longer. The pancake will puff and climb up the sides of the pan. Sprinkle with confectioners’ sugar, then cut in wedges and serve with maple syrup and crisp bacon.

That looks really yummy, and I have a huge cast iron skillet I bought for making chicken or scones that would be perfect. Oh, and I just got 2 big bags of baking apples - I was going to make a tart and dehydrate the rest, but this looks like it could be fun. I think for a small batch I could make it in the toaster oven on a smaller cast iron pan that fits it. To make it a bit heartier and more nutritious you could probably use White Whole Wheat Flour.

I'm thinking of typing in a couple of my favorites out of "Perfect Baking" and the "King Arthur Flour Anniversary Book". Real Scottish Scones are easy to make and very versatile - they freeze well too. Oh, and Rose's Recipe for Cinnamon Rolls (you'll never buy those awful things at Cinnabon again). The Chocolate Sponge Cake makes a perfect base for several different renditions.

The way this is growing do you think we should actually split it up into 3 threads - Entres, Desserts, Beverages, and possibly a fourth for Appetizers and Snacks? That would keep it more organized in the thread type format.

5 15 oz cans of cooked yellow squash

1/2 bacon

I medium onion

Open cans and drain liquid from squash

Dice onion

Cut bacon into small pieces and fry until crisp. Remove bacon retaining the grease. Add squash and onions to grease and cook over medium heat until almost all the moisture is driven off the squash, concentrating the flavor. Mix bacon pieces into squash.

Ground cayenne pepper
1 c Buttermilk

Combine all dry ingredients.
Add eggs, buttermilk, onions, and oil or bacon drippings. Mix well.
Drop in deep hot fat by spoonfuls and brown on all sides.

All Cooks break out the special stuff for the holidays so here's one for ya' all to consider. (Stolen originally from "Taste of Home")

Lemon-Blueberry Tea Bread (Taste of Home) -----------------------------------------------------------------------------------------------------------------------------

Ingredients

* 1/2 cup butter, softened (not melted but warmed enough to be very soft)
* 1 cup sugar
* 2 eggs
* 1 teaspoon grated lemon peel
* 1-1/2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 1/2 cup milk
* 1 cup fresh or frozen blueberries
* 1/4 cup confectioners' sugar
* 1 tablespoon lemon juice

Directions

* In a small bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in lemon peel. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Fold in blueberries. * Pour into a greased 8-in. x 4-in. loaf pan. Bake at 350° for 65-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. In a small bowl, combine confectioners’ sugar and lemon juice until smooth; drizzle over warm bread. Yield: 1 loaf.

Tip: Cream the butter real well - until it starts turning fluffy and changes color to a lighter yellow. Pound Cakes, and Tea Breads are really a type of Pound Cake, rely to no small extent on incorporating air into your batter to help it rise.

Tip: To quickly warm the eggs up to room temperature put the eggs in a bowl or small sauce pan and run hot tap water over them. Let them set about 5 minutes before using.

Tip: When adding the eggs it is easier to crack them all and put the eggs in a bowl and then you can just "pour" them in as needed. Eggs, along with the butter mixture, should also be thoroughly beaten till the batter starts lightening - showing that a lot of air has been incorporated into the batter.*

Another tip I thought of - coat the berries in a light coating of flour - just dust them. It helps keep them from sinking to the bottom of the pan.

*This is where having a stand type mixer comes in real handy. It never gets tired of standing there fluffing things up.

Another one that I am trying as we speak (its in the oven now) is I used King Arthur Flour's "Unbleached Cake Flour" which is something they came out with recently. I am guessing that it will give it a finer grain.

It doesn't get much easier than Pound Cake/Tea Bread. Try a French Genoise some time. I also make a killer Chocolate Sponge Cake - I do miniatures and they are just wonderful with whipped cream and Raspberry Puree on top. ;-)

Scones are easy to make yourself - they are related to Biscuits. If properly done they are flaky, tasty, and just heavenly with Scottish Marmalade. Robertson's Golden Shred or Keillor Dundee Marmalade (Trader Joe's has the best price I've found on the Keillor Dundee Marmalade - which is my all time favorite).

It's too long to type in but easy to understand. If you can find a copy of the King Arthur Flour Anniversary Cook Book it is a wonderful basic reference.

I make them with the full load of Butter and Sugar. Although if you are going to put preserves on them cutting back a little on the sugar is advisable.

Then you may like the two I mentioned. I have others on my list of resources but they are mostly the same as you've encountered - they want you to buy at least a quarter or a half.

Belle Brooke is in Texas but if I recall you're down south and I think they're up in the Panhandle.

I forget where Slanker's is but I think they might be in Texas too.

Another one, slightly more expensive because they are certified organic, is Alderspring Ranch in Idaho.

No religious, medical, or other problem with sweets; it's just that all that I read about refined sugars, doesn't make me want to ingest them any more.

(There's nothing I'd love more than to chow down on some Snickers or Babe Ruths, with with a tall glass of whole milk, but I won't do it any longer.)

Then don't short yourself. I very rarely use refined sugar. I use for baking, and most things, Florida Crystals which is an unbleached organic natural Cane Sugar. It is still sugar so you shouldn't overindulge but it is much better than bleached flavorless white sugar.

Also for Brown Sugar I use Billington's Muscovado Sugar - which is also a semi-raw minimally processed sugar. A lot of commercial Brown Sugars are bleached and then have some of the natural molasses added back in to turn it into "brown" sugar.

Also there are other sweeteners, each with their own characteristics, which can be used in baking.

Honey

Blue Agave

Stevia (almost zero calories)

Sucanit (unrefined cane sugar)

Date Sugar - made from dates as the name implies.

Maple Syrup or Sugar.

The one thing to remember about all of these substitutes is that most do have their own characteristic flavor and so that must be accounted for in the final product. For most cakes and cookies I prefer the unrefined evaporated cane juice sugar - it adds a nice warm molasses flavor. I also use it in Bread making.

Just FYI - the King Arthur Unbleached Cake Flour worked wonderfully. I am having to restrain myself - I made a double batch and some of it I used in my 6 cup mini-bundt pan - I've eaten two so far - they were supposed to be for other people. Hee, hee. I missed that earlier - I guess I should have been wearing my reading glasses. No, Stevia is actually the leaf of a South American plant which is dried and then ground up. By weight it is much sweeter than standard cane sugar, has no calories to speak of, and has no known toxic side effects. Because of the big money politics of the FDA (Aspartame a.k.a. Nutra-Death is patented and verrrrrry profitable whereas Stevia is not patentable and would not yield the same obscene profits of monopoly), and their highly corrupt operations, it is not allowed to be used and billed as a sweetener. It is one of the most ghastly corruptions and aberrations of that terminally corrupt operation called the FDA - right up there with "anti-depressants".

World's Best Butter Cookies

1lb Butter
1 Cup Sugar
4 cups Flour
3 Egg Yolks
1 teaspoon Vanilla

Soften butter to room temperature. In a large mixing bowl cream the butter and sugar together. Add vanilla. Then mix in egg yolks one at a time. A little at a time mix in the 4 cups of flour until thoroughly mixed.

Spoon cookie batter into cookie press. Press onto ungreased cookie sheet. Bake at 325 - 350 for 8 - 10 minutes, or until golden brown. You can also garnish with holiday colored granulated sugar before baking.

Important!!! Remove cookies from cookie sheet immediately after removing from oven!

Do not sit in front of a tin of these all by yourself, unless you can stand to gain a few pounds. :)

3 stalks celery
1/2 cup loose chicken meat
1 small onion
1 can cream of chicken soup
1 can cream of mushroom soup (substitute w/any flavor you fancy)
Dried Parsley

1) Chop celery and onions into 3/8" bits
1a)Dump soup into large skillet with 1&1/2 cans water, start heating, stir. Add
pepper. :)
2) Mix celery/onions with chicken
3) Open up biscuit cans, take two at a time and pound into 4-inch circles.
4) Spoon lump of celery/onion/chicken mash into dough round, form into sealed
mini-pie dealie. Repeat 10x.

This is a nice Oatmeal Cookie Recipe that I picked up. Like most recipes I just have to tinker. One thing I noticed when I first made these cookies is that they were not spicy enough for my taste so increased the Cinnamon to about 1 1/2 teaspoons, added 1/2 teaspoon of Allspice, and about an 1/8th of teaspoon of fresh ground Nutmeg (a little goes a long ways - too much and it dominates the flavor).

Chewy Oatmeal Cookies

Beth's Spicy Oatmeal Raisin Cookies

Ingredients

* 1/2 cup butter, softened
* 1/2 cup butter flavored shortening
* 1 cup packed light brown sugar
* 1/2 cup white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground cloves
* 1/2 teaspoon salt
* 3 cups rolled oats
* 1 cup raisins (I usually add more like a cup and half - dried currants work good too)

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

3. Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

***Another tip here - I line the cookie sheet with a sheet of parchment paper and then slide the sheet of parchment paper, cookies and all, onto my cooling rack. You can re-use the same sheet of parchment several times. If you have a cake decorating store nearby you can usually buy either a large bulk roll (most economical) or pre-cut sheets that you just slap right on to the cookie sheet.

A couple of points.

You can't use a liquid oil to replace the butter and shortening because you are using the solid as part of the leavening - when it says cream that means to beat in air which increases the volume and the air bubbles expand under the heat of baking to increase the volume of the baked good.

For Shortening I use Spectrum Naturals Organic Shortening. No trans fats and no GMO Soy - in fact no Soy at all.

Earth Balance makes a shortening as well and it comes in convenient sticks. I believe they use Canola although I have seen one, I don't know if it was theirs, that uses olive oil in the formulation.

The danger of "saturated fats" has been over sold. Butter is better for you than Margarine. Although hardcore Vegans will not use dairy. Personally, I'm not giving up my butter although I use Olive Oil and Grapeseed Oil for most of my oil needs.

¾ cup oil
1 cup sugar

1 egg
½ tsp. salt
2 tsp. baking soda

Add sugar to oil, and then add molasses & egg. Beat well. Mix dry ingredients together and slowly add to first mixture. Form into walnut sized balls and roll in sugar. Bake on greased cookie sheet. 8 -10 minutes at 375. I prefer 8 minutes baking time making them chewy.

JUBILEE JUMBLES

My mother got all of us kids hooked on these when we were little and generally we would make them once a year at Christmastime and frost them with red and green colored frostings. As kids we always looked forward to these eagerly and once we got old enough were allowed to help. (Although my mother, a very frugal woman, never allowed us to put on as much frosting as we kids would have preferred.) You can also add a few colored sugar sprinkles if you desire. *A word of caution on food colorings - if coloring the frosting use the natural food store varieties of food colorings made from natural vegetable colorings as the standard colorings are not at all good for you even in small amounts. Typically these are best frosted whether colored or au naturel. They are a cake like cookie with lots of lift and are a little lighter than your usual chocolate chip cookie. I've included the frosting recipe following the cookie recipe.

Basic Recipe (Makes about 6 Dozen)

3/4 Cup soft shortening (Room Temperature) (Preferably organic with no hydrogenated or GMO oils)
1 1/2 Cups Light Brown Sugar (preferably light brown Muscavado as it gives the cookies a more decadently rich flavor - I like Billington's but have also used Alter-Eco) - packed (300 Grams)
3/4 Cup granulated sugar (I prefer unbleached organic cane sugar as it adds to the flavor) - (150 Grams)
1 1/2 Cups undiluted evaporated milk (1 twelve ounce can) (For even greater decadence use heavy cream although I made the last batch using half and half and had to add about an eighth of a cup more flour because the dough was too soupy.)
3 Eggs (Room Temperature)
1 1/2 Teaspoons Vanilla (Preferably Niellsen-Massey Madagascar Bourbon Vanilla - expensive but worth it as you can really taste the difference.)
4 1/8 Cups All Purpose Flour - (578 Grams)
1 Teaspoon Baking Soda
3/4 Teaspoon Salt
Optional: 2 Generous Cups Chocolate Chips i.e., 12 ounces
(Not optional as far as I'm concerned.)


Optional: 1 1/2 Cup Shredded Coconut, or finely cut Dates or Raisins, or 1 12 ounce package Chocolate Chips (I always use Chocolate Chips).
1 1/2 Cup finely chopped nuts. (I tried it once and did not care for it) Something I have not yet tried is Trader Joe's Almond Meal which might be tasty.

Directions

They are the same for either sized batch as only the quantities change.

Mix the flour, soda, and salt together - either sifted or with a whisk (or a fork if you have neither a sifter or whisk) Set Aside for the moment.

This following works best in a stand type mixer but the batch and a half is manageable with a good hand mixer.

Thoroughly mix sugar, shortening, and eggs. Stir in milk and vanilla at low speed until combined. Stir in flour mixture one cup at a time until thoroughly combined. Just like a cake don't over mix but you do want it thoroughly combined with no lumps.

This is important because the batter/dough is very loose rather than a thick cookie dough. The actual finished cookies are also more cake-like than most. Chill covered with plastic wrap for at least two hours in the fridge to firm up (I usually make it a day ahead and let it chill overnight). Doing it the day before means not having so much work all in one chunk.


Baking

Pre-heat oven to 375 Degrees F or (71 Degrees Celsius)

Using a non-stick cookie sheet or one covered with a sheet of Parchment Paper (saves on clean up and makes them easier to remove without damage) measure out 1 tablespoon portions of well chilled batter onto cookie sheet (a cookie scoop is real handy here). If you have neither parchment nor a non-stick sheet then lightly grease the sheet with a dab of shortening, and you might need to do this on a lot of so-called non-stick sheets as you do not want to tear the cookies up removing them from the sheet. I always use parchment paper as it is the most foolproof.

Bake for about Ten Minutes or until cookies are turning to a light golden brown and have puffed up. Once they have come out of the oven and cooled enough to remove from the cookie sheet without damage then using a thin turner carefully remove them to a surface covered with plastic wrap or Waxed Paper and then Frost them while still warm using the following frosting recipe. I like using a small spreader to even it out a bit.

*Hint: Measure out the sugar for the frosting in advance and then make the frosting while the first sheet is in the oven. Note: The frosting will firm up as it cools so just return it to the top of the double boiler or another turn or two in the microwave to keep it pourable. You might need to add just a dash of milk or cream.

Frosting Recipe (Double this for the double batch recipe)

1 Pound confectioner's powdered cane sugar (Organic if available). If you like heavy frosting make more.
1/4 Cup Milk or Cream (Cream of course is richer)
1/4 pound real butter (one stick) (softened or melted)
1 teaspoon vanilla
*Dash of salt if unsalted butter is used.

Directions:

Run the sugar through a sieve or sifter to break up any lumps into a medium sized microwave safe bowl or upper half of a double boiler. Sieving or sifting is particularly important with organic sugar that does not have chemical anti-clumping agents added.

Using a hand mixer thoroughly combine sugar, butter, and vanilla. Then adding a little bit at a time incorporate the milk or cream until you have a thick smooth consistency.

Now set the bowl with the frosting over the upper half of a double boiler and gently heat (or if you must - microwave in a microwave safe bowl starting at about 1 minute - preferably use non-reactive tempered glass - pyrex) until the frosting begins to thin and change color (it does this because you are changing the crystal structure of the sugar - which is what you are trying to do). Beat a touch more and scrape the sides of the bowl just to get everything combined well. The frosting will thin out and combine better over the heat and it does make a difference in the flavor. You'll notice the frosting changes both color and consistency. So, you do want to thoroughly heat the frosting until it is hot but not to the point of bubbling. What you are trying to achieve is a pourable/spreadable consistency which is not real thick but not thin and runny either. If you get it too thin just add a dash more sugar. Mix it again to get an even consistency.

Now, working quickly, but not too quickly, spread about a tablespoon of frosting onto each cookie.

For A Double Batch

(Instructions above are the same only the quantities change)

Damn, I wish I had time to do those too. I love oatmeal raisin!

They are good. What I do is I'll make a batch (or two) and then form the cookies with a scoop - placing them very close together on a sheet (or waxed paper plate) and stick them into the freezer until they are good and set - about 2 hours - and then bag them in a zip lock bag (or tupperware). Then when I want some I just take out as many as I want and bake them fresh. That way it is quick and easy when you want a few. Works good with chocolate chip cookies too. I also do it with sugar cookies.

1 cup sour cream ( I use Greek yogurt)
1 (4 oz) can diced green chillies (these are not hot)

1. Preheat oven to 350 degrees. Grease a 9x13 pan
2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese.
6. Bake 22 min and then under high broil for 3 min to brown the cheese.

1 pound spicy Italian sausage
1/2 pound bacon, chopped
7 cups water
3 chicken flavored bouillon cubes

1 medium onion, chopped
2 cups chopped kale
1 cup heavy whipping cream
salt and pepper, to taste

Directions

In a dutch oven or large soup pot over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside.

In the same dutch oven or large soup pot over medium-high heat, brown bacon; remove and set aside. Leave two tablespoons of rendered bacon fat in the skillet.

Saute the potatoes, onion, and garlic in the rendered bacon fat over medium or low-medium heat. Saute until the onion begins to be translucent and the potatoes have are still a little firm, but are beginning to soften.

Add the sausage, bacon, 7 cups water, and 3 chicken bouillon cubes to the pot. Simmer until the potatoes are tender.

2. Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered. Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess oil.

Ingredients:
Crust and Topping
3 cups all-purpose flour
1 1/2 cups sugar
1/4 tsp salt
1 1/2 cups (3 sticks) unsalted butter, chilled

Fruit Filling:
4 large eggs
2 cups sugar
1 cup sour cream
3/4 cup flour
pinch salt
zest of 1/2 lemon
1 tsp almond extract
2 (16-oz) packages frozen blackberries, thawed and drained

Directions:
To make the crust and topping, preheat the oven to 350 degrees. Grease a 9x13 inch baking pan.

Combine the flour, sugar, and salt in the bowl of a food processor. Pulse a few times to mix. Cut the butter into 1/2-inch cubes, and add to the flour mixture. Process until the butter is evenly distributed but the mixture is still crumbly, 30-60 seconds.

Reserve 1 1/2 cups of the mixture to use as the topping. Press the remaining mixture into the bottom of the pan, and bake 12-15 minutes. Cool for at least 10 minutes.

To make the filling, whisk the eggs in a large bowl, then add the sugar, sour cream, flour, salt, lemon zest, and almond extract. Gently fold in the berries and spoon the mixture over the crust. Sprinkle the remaining flour mixture evenly over the filling, and bake 45 to 55 minutes.

Cool at least 1 hour before cutting into bars, or scoop out of the pan to serve cobbler-style.

I love blackberry most anything. If I knew where the cookbook was I'd get even by posting "The Silver Palate's" recipe for Blackberry Mousse.

The best Blackberry Pie I ever had was the one served at a local diner. They also had the best Hamburgers in town (only used real Ground Chuck, Best Foods/Hellman's Mayo, and Mrs. Neushin's Kosher Dills - a local delicacy. I used to play Tennis with her Grandson and the recipe was a closely held secret.)

Cracker Barrel chicken n' dumplins

Ingredients:
2 cups Flour
½ teaspoons Baking Powder
1 pinch Salt
2 Tablespoons Butter
1 Cup butterMilk, A Bit Less Than A Full Cup (you can use regular milk if needed)
2 quarts Chicken Broth
3 cups Cooked Chicken

Preparation Instructions:
In a bowl, combine the flour, baking powder and salt. Cut the butter into the dry ingredients with a fork or pastry blender. Stir in the milk, mixing with a fork until the dough forms a ball.

Heavily flour a work surface. You’ll need a rolling pin and something to cut the dumplings with. I like to use a pizza cutter. I also like to use a small spatula to lift the dumplings off the cutting surface.

Roll the dough out thin with a heavily floured rolling pin. Dip your cutter in flour and cut the dumplings in squares about 2"x2". It’s okay for them not to be exact. Just eye ball it. Some will be bigger, some smaller, some shaped funny.

Use the floured spatula to put them on a heavily floured plate. Just keep flouring between the layers of dumplings.

To cook them, bring the broth to a boil. Drop the dumplings in one at a time, stirring while you add them. The extra flour on them will help thicken the broth. Cook them for about 15-20 minutes or until they not doughy tasting. Add the cooked chicken to the pot and you’re done!

Recipe adapted from girl meets life.

Ingredients
1 cup yellow cake mix
1 cup confectioners’ sugar
1/2 stick (1/4 cup) butter or margarine, cut into small squares
1/4 cup milk or 1/8 cup soy milk
sprinkles (optional)

Instructions
Mix cake mix and icing sugar in microwave-safe bowl. Add butter and milk. Don’t stir.

Microwave for 2 minutes. Stir immediately until completely combined. Add sprinkles. Do not over mix as sprinkle color may bleed.

Spread into greased pan. Refrigerate for at least one hour.

* Makes one 6 x 6” container, or double for an 8 x 8” pan.
** Notes: If the batter comes out too runny, stir in about 1 tsp or sugar or cake mix at a time until stiff. If too thick to stir in all components, slowly add 1/2 tsp of milk at a time, but batter should be thick!

1 cup pineapple juice
1/2 cup brown sugar

Oatmeal Cake with Coconut Pecan Frosting~YUM

1/2 C quick cooking oatmeal
3/4 C boiling water
1/2 C sugar
1/2 C brown sugar
2/3 C flour
1/2 tsp salt
1/2 tsp baking soda
1 egg
1/4 C of shortening

Mix the oatmeal with the boiling water, stir and cover. Mix the remaining ingredients then stir in the oatmeal mixture. Grease and flour a 9×9 pan. Pour batter into pan and bake at 350 for 23-25 minutes.

Coconut Pecan Frosting:

3 TBS melted butter
1/3 C brown sugar
1/2 C sweetened shredded coconut
1/2 C chopped nuts
2 TBS milk
1/2 tsp vanilla

Combine all ingredients and mix thoroughly. Carefully spread frosting over the top of the cake. Broil until coconut is just brown. Watch very closely – it doesn’t take long. Cool, slice and serve.

Baked Cheese & Broccoli Patties

yield: 8 broccoli patties

Ingredients:
2 teaspoons vegetable oil
2 cloves garlic - minced
1/2 onion - chopped
1 (12 ounce) bag frozen broccoli - defrosted
3/4 cup panko breadcrumbs
1/2 cup sharp cheddar cheese
1/3 cup parmesan cheese
2 eggs - beaten
salt/pepper

instructions:
preheat the oven to 400 degrees. Lightly grease a baking sheet lined with aluminum foil.
Heat the oil in a small pan over medium heat, add in the garlic and onions. Season with salt/pepper to taste. Sauté until onions are garlic are tender, set aside to cool.

Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. Pour the drained broccoli into a large bowl, add the onion and garlic and mix gently.

To the same bowl, add the panko, the cheeses, eggs, and salt/pepper to taste. Mix together and form into patties, place on the prepared baking sheet.
Bake in the preheated oven for 15 minutes. Flip and bake for another 15 minutes or until browned and crispy.

4 cups Bisquick
1 cup sour cream
1 cup 7-up
1/2 cup melted butter

Mix bisquick, sour cream and 7 up. Dough will be very soft - don't worry Knead and fold dough until coated with your baking mix. Pat dough out and cut biscuits using a round biscuit / cookie cutter. Melt butter in bottom of cookie sheet pan or 9x13 casserole dish. Place biscuits on top of melted butter and bake for 12-15 minutes or until brown at 425 degrees,

Taco Pasta Salad

Ingredients:

1 package (16 ounces) spiral pasta
1 pound ground beef
3/4 cup water
1 envelope taco seasoning
2 cups (8 ounces) shredded cheddar cheese
1 large green pepper, chopped
1 medium onion, chopped
1 medium tomato, chopped
2 cans (2-1/4 ounces each) sliced ripe olives, drained
1 bottle (16 ounces) Catalina or 16 ounces Western salad dressing

Directions:

Cook pasta according to package directions. Meanwhile, in a skillet, cook beef over medium heat until no longer pink; drain. Add water and taco seasoning; simmer, uncovered for 15 minutes.

Rinse pasta in cold water and drain; place in a large bowl. Add beef mixture, cheese, green pepper, onion, tomato and olives; mix well. Add the dressing and toss to coat.

Cover and refrigerate for at least 1 hour.

Frozen Peanut Butter Cheesecake

Ingredients

6 tablespoons butter
1 1/2 cups semi-sweet chocolate chips
2 1/2 cups crispy rice cereal
1 (8 ounce) package cream cheese, softened
1 cup sweetened condensed milk
3/4 cup creamy peanut butter
1 teaspoon vanilla
2 tablespoons lemon juice
1 cup frozen whipped topping, thawed
2 tablespoons hot fudge sauce
2 tablespoons creamy peanut butter

Directions

1In a medium microwave safe bowl, melt butter and chocolate chips in the microwave for about a minute or until melted. Stir together until combined. Add crispy rice cereal and stir well to coat.

2Press into the bottom and up the sides of a 9-inch springform pan. You could use a pie pan but I've found that a springform pan is much easier when it comes to removing slices. Place in the freezer to chill while you make the filling (about 10 minutes).

3In a large bowl beat cream cheese until fluffy. Add the sweetened condensed milk and peanut butter and mix until thoroughly combined.

4Add vanilla and lemon juice and mix until combined.

5Gently fold in the whipped topping. Pour filling into the prepared crust.

6Heat fudge and peanut butter in two small separate bowls for 20-30 seconds or until warm. Drizzle over filling.

7Freeze for 4-6 hours or until pie is firm. Remove the cheesecake from the freezer about 10 minutes before serving to make cutting easier. Garnish with peanut butter and chocolate candy bars.

Quick Peach Cobbler

This is an oldie but goodie!!

1cup of sugar
1cup of flour
1cup of milk
1stick of butter melted
1 large can of sliced peaches
Tip: also berries work great too!

In a mixing bowl mix the flour, sugar and milk together until well blended. set aside.

Pour melted butter into the bottom of your pan. Pour the peaches and the juice in the pan. Pour the flour,sugar and milk mixture over the peaches, do not stir it. Bake on 350• for approx 40 minutes. Enjoy.

5 eggs
1/4 cup milk
16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind)
4 scallions (green onions, spring onions, whatever you prefer to call them)
1 cup shredded extra sharp cheddar cheese
If you’re into the meats – cooked center cut bacon or cooked sausage

11×17 pan, sprayed with cooking spray (Note: I think a 9×13 works better, but might need to bake a little longer)

1. Mix your eggs and milk in a large bowl. Cut each biscuit (I’m all about scissors in the kitchen) into fours and add it to the bowl. I like to do this before I cook the bacon or cut up the scallions – give the biscuits some time to really soak in the eggs.

2. Cut up your scallions, shred your cheese, cook and break up your bacon (or sausage). Add everything to the bowl.

3. Mix it all up and pour into your pan. Bake at 350 for 25 minutes (make sure it isn’t runny – mine this morning took 28 mins).

LEMON ICING

1 cup(s) POWDERED SUGAR; Plus 1 Tablespoon.

1/2 teaspoon(s) LEMON EXTRACT

Instructions

Combine flour, baking soda, baking powder and salt in a bowl.

Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl.

Pour wet ingredient into the dry ingredients and blend until smooth. Add oil and mix well.

Pour batter into a well greased 9x5-inch loaf pan.

Bake at 350 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean.

Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.

When the loaf is cool, remove it from pan and frost the top with the icing. Let the icing set up before slicing.

Slow Cooker Cabbage Rolls

•1 large head cabbage
•1 can (8 ounces) tomato sauce
•3/4 cup quick-cooking rice
•1/2 cup chopped green pepper
•1/2 cup crushed saltines (about 15 crackers)
•1 egg, lightly beaten
•1 ounce onion soup mix
•1-1/2 pounds lean ground beef (90% lean)
•1 can (46 ounces) V8 juice
•Salt to taste
•Grated Parmesan cheese, optional

Directions

•Cook cabbage in boiling water just until leaves fall off head. Set aside 12 large leaves for rolls; drain well. (Refrigerate remaining cabbage for another use.) Cut out the thick vein from the bottom of each reserved leaf, making a V-shaped cut; set aside.

•In a large bowl, combine the tomato sauce, rice, green pepper, cracker crumbs, egg and soup mix. Crumble beef over mixture and mix well.

•Place about 1/3 cup meat mixture on each cabbage leaf; overlap cut ends of leaf. Fold in sides, beginning from the cut end. Roll up completely to enclose filling. Secure with toothpicks if desired.

•Place cabbage rolls in a 3-qt. slow cooker. Pour V8 juice over rolls. Cover and cook on low for 6-7 hours or until filling reaches 160°. Just before serving, sprinkle with salt and cheese if desired

Granny's Wacky Cake

Preheat oven to 350 degrees F. Sift the following into an ungreased 9x13 cake pan that you will bake cake in.

3 cups flour
2 tsp baking soda
1 tsp salt
2 cups sugar
1/4 cup cocoa

Add:

¾ cup cooking oil
1 tsp vanilla
2 Tbsp vinegar
2 cups cold water

Mix with fork. Do Not Beat!!! Bake for 25 to 30 minutes. Cool and frost (see below) or dust with powdered sugar and serve. Garnish with chocolate chips, optional.

Frosting

½ cup butter 2 finger pinch of salt 1 lb. confectioners sugar 1 tsp vanilla 1/4 cup milk or so For chocolate frosting add 3 Tbsps cocoa

Cream butter until soft. Add salt. Blend in 4 ½ cups confectioners sugar and cocoa if using. Blend in vanilla. Add remaining sugar alternately with about milk, beating until smooth. Makes 1 ¾ cups frosting.

Turtle Cheesecake Bars

Turtle Cheesecake Crust

3 cups finely chopped pecans
1 stick unsalted butter, melted
1/3 cup sugar
1/4 teaspoon salt

Cheesecake Filling

24 oz cream cheese, softened
1/4 cup full-fat Greek yogurt or sour cream
3/4 cup sugar
1 tablespoon vanilla
3 large eggs
1 cup semi-sweet chocolate chips

Toppings

1 cup coarsely chopped pecans, toasted
1 11-oz bag caramel candy, unwrapped
1 cup semi-sweet chocolate chips
6 tablespoons milk, divided

Preheat oven to 300 degrees.

Line a 13x9 pan with parchment paper, so that parchment extends over long side of pan.

In a bowl, mix crust ingredients together with a fork; press mixture onto bottom of prepared pan.

Bake crust for 20 minutes; while crust bakes, prepare filling.

Cream together cream cheese, yogurt or sour cream, sugar and vanilla.

Beat in eggs, one at a time.

After crust bakes, remove from oven and immediately sprinkle on 1 cup of semi-sweet chocolate chips.

Pour filling over chocolate chips and return to oven; bake for 50 minutes.

Allow cheesecake to cool for about hour, then place in refrigerator to chill overnight.

When ready to serve, remove cheesecake from pan using parchment paper and place on serving platter, then prepare toppings:

Toast pecans in oven for 10 minutes at 350 degrees.

Unwrap caramels and place in a microwave safe bowl, along with 4 tablespoons milk.

Microwave in 30 second intervals until caramels have melted and sauce is smooth.

Pour caramel sauce over cheesecake and immediately sprinkle on toasted and chopped pecans.

Place chocolate chips in a microwave safe bowl, along with 2 tablespoons milk, and microwave in 30 second intervals, about 2 minutes total.

Stir until smooth and drizzle over caramel-pecan topping.

Allow chocolate to set before serving.

Chicken Crescent Rolls

2 cans of low fat refrigerator crescents
1 can of healthy low sodium cream of chicken soup(26oz)
1 cup fat free cheddar cheese
2 boneless skinless chicken breast

I boil my chicken breast then shred, roll out each individual crescent, place about a Tbsp of shredded chicken in center and roll it up.

Bake on 350 for about 5 minutes until just starting to turn golden. Pour Cream of chicken over the top bake an additional 10 min top with cheddar cheese and bake for 10 more minutes.

1 packet onion soup powder
10-12 baby red potatoes, thinly sliced

Salt and pepper to taste
3 tablespoons butter
Sour cream for serving (optional)

Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, 1 packet onion soup powder and mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.

Grill for 20 to 30 minutes. Or you can bake it in the oven, at 350° for about 35 minutes or till done. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

Right now, I've got hog casings so my sausages will look more like this:

I found this recipe on the net. I'm gonna try spicing this up with some chipotles Tex-Mex style. ; )

•20 lbs of home-dressed lean pork meat

•10 lbs of clear fat pork

•1/2 lb fine salt (best quality)

•2 teaspoons sugar

•1 teaspoon ginger

•2 tablespoons pepper

•1 tablespoon sage

•6 teaspoons (2 tablespoons) cure (either Instacure #1 or Prague Powder #1)

1.Cube all of the meat and mix it with the spices.

2.Pass the mixed meat and spices twice through the medium plate of your sausage grinder.

3.Stuff the sausage into natural pork casings and prepare for the smoke house.

Once smoked, cooled, and wrapped, this sausage keeps very well in the freezer.

I find that 3 hours of heavy smoke gives this sausage the flavor that my family prefers, and I like to use apple wood or corncobs instead of hickory when I can get them. The smoke they produce is a bit milder.

Make sure to leave the sausage in the meat smoker until it reaches an internal temperature of 152 degrees.

The best smoker I have (and haven't used in 20 years) is a Kenmore portable dishwasher that I locked the dry-cycle on Hi, put a controllable vent stack on top, and then found a pan to put wet wood chips on top of the electric drying coil in the bottom of the creature.

With all the racks in there, you can feed, or smoke the neighborhood.

Italian Sausage (Italy)

2 pounds coarse-ground lean pork

3 cloves garlic, crushed
1/8 teaspoon hot dried red pepper flakes
1 teaspoon salt
1/4 teaspoon pepper
4 tablespoons water

Mix all the ingredients carefully, let stand for 1 hour, and mix again. stuff into casings, or fry plain. Makes 2 pounds.

Orange Sausage (Greece)

1 clove garlic, crushed
Grated peel from 1/2 orange
1 1/2 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon pepper
1/2 cup white wine
2 pounds coarse-ground beef
1 pound coarse-ground pork

Nix all the ingredients except the meats in a feed blender. Then add to meat. Stuff into casings, or fry plain. Makes 3 pounds.

Bratwurst (Germany)

1 pound coarse-ground pork
1 pound coarse-ground veql or beef
2 teaspoons ground celery seed
2 teaspoons ground caraway seed
1 tablespoon powdered milk
1 egg
2 teaspoons onion powder
Salt and pepper to taste
1/4 teaspoon fresh-grated lemon peel
1 tablespoon dried parsley
3 tablespoons water

Combine all ingredients. let sit for 1 hour, and mix again. Stuff into casings, or fry plain. (best in casings)

Chorizo (Mexico)

1 pound coarse-ground lean pork
1 teaspoon salt
2 tablespoons chili powder
1/4 teaspoon cloves
1/2 teaspoon cinnamon
1 tablespoon paprika
1 clove garlic, crushed
1 teaspoon oregano
2 tablespoons cider vinegar
2 tablespoons water

Combine all ingredients. stuff into casings, or fry plain. (best in casings)

I will check my other cookbooks. I have some good ones.

Thanks, farmfriend. We stuffed pork sausage this morning at 8:00am. I used the smoke sausage flavor mix from the local butcher supply. I stuffed five lbs. of pork with the mix and a little brown sugar & pepper. I'm cranking up the smoker at around 1:00pm and there's a cast iron pot of ranch beans in the oven. Sunday dinner's in the pipe.

Blow your MIND" Tomato Basil Pasta! - No Straining, just Stirring

Pasta, Tomatoes, Veggie Broth, Olive Oil, and Seasonings (details below)

Throw it all in the pot, INCLUDING the uncooked Pasta, and cook! - Bring it to a boil, then reduce to a simmer. The starch leaches out of the pasta and makes a rich, warm sauce for the noodles. The other ingredients cook right along with the pasta Ingredients

12 ounces pasta (I used Linguine)
1 can (15 ounces) diced tomatoes with liquid ( I used zesty red pepper flavor)
1 large sweet onion, cut in julienne strips
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
2 large sprigs basil, chopped
4 1/2 cups vegetable broth (regular broth and NOT low sodium)
2 tablespoons extra virgin olive oil
Parmesan cheese for garnish

Directions

Place pasta, tomatoes, onion, garlic, basil, in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil.

Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated – I left about an inch of liquid in the bottom of the pot – but you can reduce as desired .

Season to taste with salt and pepper , stirring pasta several times to distribute the liquid in the bottom of the pot. Serve garnished with Parmesan cheese.

there's a cast iron pot of ranch beans in the oven.

also from the frugal gourmet cookbook. I've made these a lot and they are really really good. do add water to them or they will get too thick.

Boston Baked Beans

2 pounds small white beans
1 teaspoon baking soda
1 pound bacon
1 large onion
8 Tablespoons sugar
2/3 cups molasses
2 teaspoons dry mustard
4 teaspoons salt
½ teaspoon black pepper

Soak beans over night. Drain and rinse. Simmer for 10 min. in baking soda water. Drain and rinse.

Place coarsely chopped onion in bottom of a large (oven safe) Dutch oven, then half the bacon chopped, beans, other half bacon, spice mixture, water to barely cover.

Cover with lid and bake for 6 hours at 300 deg., don’t stir until after the first 2 hours. Add small amounts of water if they start to dry.

Do not reheat leftovers on top of stove, they will burn.

doesn't add, takes away. according to my mother, her mother always said baking soda took the poop out of the beans. In other words you fart less. Don't know about that but it does take something out of the beans. It will turn the water lime green and foam up. I skim the foam several times. Nasty odor too. Make sure you rinse before baking. I've always done it and the beans are always fantastic.

ok a web search says it neutralizes the acids which can also cause flatulence. it also takes some of the sugars out as does the soaking. that is not an issue with this recipe since you are baking them with a ton of sugar. They are the best beans I've ever had though.

Cheesy Ham Biscuit Pull Aparts

1 (16.3 oz) Pillsbury Grands Flaky Layers Biscuits (I used the buttery flavor).
1 egg
2 tablespoons milk
3/4 cup diced ham
1/4 cup thinly sliced green onion
1/2 cup shredded cheddar
1/2 cup Monterey Jack cheese
1/2 teaspoon granulated garlic

Heat oven to 350 degrees. Spray a 11 x 7 or 12 x 8 glass baking dish with cooking spray. In a large bowl, beat egg and milk with a wire whisk until smooth.

Separate dough into individual biscuits and cut each biscuit into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in ham, cheese, onions and granulated garlic. Spoon mixture into prepared dish, arrange biscuit pieces in a single layer.

Baked at 350 for 23 - 25 minutes or until golden brown. You can either cut into squares or just pull apart and serve.

2lbs chicken breast
8 potatoes
1/3 cup Olive Oil

{Toppings}
2 cups Shredded Cheese
1 cup crumbled Bacon
1 cup diced Green Onion

Instructions

Preheat oven 500F
In a large bowl mix Olive Oil, Salt, Pepper, Paprika, Garlic Powder & Hot Sauce
Cube the potatoes & add to the bowl
Coat a 9x13 dish with cooking spray
Add potatoes, allow for excess sauce in the bowl
Bake the potatoes for 45 minutes, stir every 15 minutes
Cube the chicken & add it to the bowl with the left over sauce
Mix together cheese, bacon & green onion in a small separate bowl
Once potatoes are done, add the uncooked marinated chicken
Then layer the toppings over the chicken
Bake for 15 minutes or until the chicken is cooked

Pumpkin Better Than Sex Cake

•1 box yellow cake mix
•1 – 15 oz. can pumpkin puree (not pumpkin pie mix)
•1 – 14 oz. can sweetened condensed milk
•1 – 8 oz. tub cool whip
•½ bag Heath Bits
•Caramel Sundae Sauce

Instructions

1.In a large bowl, mix together the cake mix and pumpkin puree until a smooth batter forms.

2.Pour batter into a greased 9×13 baking dish, and bake at 350º, according to the directions on the cake mix box (approx 23-28 mins).

3.Remove cake from oven and let cool for about 10 minutes after baking.

4.Using the end of a wooden spoon to poke holes all over the top of the cake.

5.Pour the sweetened condensed milk over the cake. This should fill in the holes and soak into the cake.

6.Refrigerate for 30 minutes.

7.Remove cake from refrigerator and spread cool whip over top of cake. Sprinkle on the heath bits, and drizzle caramel over top. (I didn’t think the cake needed a lot of caramel at this point so I only used about ¼ of the jar. I thinned it out first by heating it in the microwave.)

8.Refrigerate for 3-4 hours, or overnight

CROCKPOT CINNAMON ALMONDS

Ingredients:

1 1/2 C. Sugar
1 1/2 C. Brown Sugar
3 Tbsp. Cinnamon
1/8 tsp. Salt
1 Egg White
2 tsp. vanilla
3 Cups Almonds
1/4 C. Water

Directions:
In a medium sized bowl, mix together sugars, cinnamon, and salt. Set aside. In another medium sized bowl, whisk the egg white and vanilla until it’s a little frothy. Add almonds. Make sure the almonds are thoroughly coated in the egg white mixture. Add cinnamon mixture to the almonds and toss until coated.

Thoroughly spray with the stoneware of your crock pot with non-stick cooking spray and add the mixture of almonds and sugars.

Cook on low ( with the lid on) 3-4 hours stirring every 20 minutes. In the last hour, add the 1/4 C. of water and stir well. This ensures a crunchy yummy coating. (*make sure after you've added the water that you continue to cook the nuts for another 45 minutes to an hour.)

You have to stir really well, especially as it gets later in the cooking process.

Line a baking sheet with parchment and spread the almonds flat to cool. The almonds will be sticky at this point, so make sure you separate them a little and have no large mounds.

I omitted the salt. Who needs salt with fish?

Ingredients
2 teaspoons minced garlic
1/2 cup butter, cubed
6 tablespoons lemon juice
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon hot pepper sauce
5 salmon fillets or steaks (6 ounces each)

Directions
In a small skillet, saute garlic in butter; whisk in lemon juice, salt, pepper and pepper sauce.
Transfer 2/3 cup to a serving bowl; set aside.
Place salmon in a greased 15x10x1-in. baking pan.
Drizzle with remaining lemon butter.
Broil 4-6 in. from heat 10-15 minutes or until fish flakes easily with a fork.
Serve with reserved lemon butter. Yield: 5 servings.

The Winter Squash/Pumpkin pie-filling recipe says to mix the ingredients in the order given but the squash/pumpkin is listed twice, so use best judgement. Mine would be to add that last but it's listed first and fourth there.
