This was actually, despite my teasing her, farmfriend's idea, and since I am a lifelong cook who enjoys good food I thought this would be a fun perennial thread. This is a place to share and exchange recipes, tips, sources, and treats. I am sure that there is a lot of expertise just waiting to be tapped into. I threw beverages into the title because I love a good cup of coffee and so have spent a lot of time reading about, brewing, and enjoying good coffees. My own strong areas in cooking are baking, Tex Mex, and Italian. I do not represent myself as an expert but as a someone who simply enjoys good food and is not uncomfortable in the kitchen. As a long time Kitchen Gardener I am used to taking what I have harvested and using what I have and trying to be a bit creative. I have also learned some of things which are fun to grow and good to have for a different touch.

Turtle Cheesecake Crust 3 cups finely chopped pecans Cheesecake Filling 24 oz cream cheese, softened Toppings 1 cup coarsely chopped pecans, toasted Preheat oven to 300 degrees. Line a 13x9 pan with parchment paper, so that parchment extends over long side of pan. In a bowl, mix crust ingredients together with a fork; press mixture onto bottom of prepared pan. Bake crust for 20 minutes; while crust bakes, prepare filling. Cream together cream cheese, yogurt or sour cream, sugar and vanilla. Beat in eggs, one at a time. After crust bakes, remove from oven and immediately sprinkle on 1 cup of semi-sweet chocolate chips. Pour filling over chocolate chips and return to oven; bake for 50 minutes. Allow cheesecake to cool for about hour, then place in refrigerator to chill overnight. When ready to serve, remove cheesecake from pan using parchment paper and place on serving platter, then prepare toppings: Toast pecans in oven for 10 minutes at 350 degrees. Unwrap caramels and place in a microwave safe bowl, along with 4 tablespoons milk. Microwave in 30 second intervals until caramels have melted and sauce is smooth. Pour caramel sauce over cheesecake and immediately sprinkle on toasted and chopped pecans. Place chocolate chips in a microwave safe bowl, along with 2 tablespoons milk, and microwave in 30 second intervals, about 2 minutes total. Stir until smooth and drizzle over caramel-pecan topping. Bake on 350 for about 5 minutes until just starting to turn golden. Pour Cream of chicken over the top bake an additional 10 min top with cheddar cheese and bake for 10 more minutes. Thanks for the salami recipe, Lod. I'll have to get some salami casings and try that. Right now, I've got hog casings so my sausages will look more like this: I found this recipe on the net. I'm gonna try spicing this up with some chipotles Tex-Mex style. ; ) •20 lbs of home-dressed lean pork meat •10 lbs of clear fat pork •1/2 lb fine salt (best quality) •2 teaspoons sugar •1 teaspoon ginger •2 tablespoons pepper •1 tablespoon sage •6 teaspoons (2 tablespoons) cure (either Instacure #1 or Prague Powder #1) 1.Cube all of the meat and mix it with the spices. 2.Pass the mixed meat and spices twice through the medium plate of your sausage grinder. 3.Stuff the sausage into natural pork casings and prepare for the smoke house. Once smoked, cooled, and wrapped, this sausage keeps very well in the freezer. I find that 3 hours of heavy smoke gives this sausage the flavor that my family prefers, and I like to use apple wood or corncobs instead of hickory when I can get them. The smoke they produce is a bit milder. The best smoker I have (and haven't used in 20 years) is a Kenmore portable dishwasher that I locked the dry-cycle on Hi, put a controllable vent stack on top, and then found a pan to put wet wood chips on top of the electric drying coil in the bottom of the creature. These are ones that came out of my frugal gourmet cook book. I have tried the Italian and the Chorizo. both were good. Italian Sausage (Italy) 2 pounds coarse-ground lean pork Mix all the ingredients carefully, let stand for 1 hour, and mix again. stuff into casings, or fry plain. Makes 2 pounds. Orange Sausage (Greece) 1 clove garlic, crushed Nix all the ingredients except the meats in a feed blender. Then add to meat. Stuff into casings, or fry plain. Makes 3 pounds. Bratwurst (Germany) 1 pound coarse-ground pork Combine all ingredients. let sit for 1 hour, and mix again. Stuff into casings, or fry plain. We stuffed pork sausage this morning at 8:00am. I used the smoke sausage flavor mix from the local butcher supply. I stuffed five lbs. of pork with the mix and a little brown sugar & pepper. I'm cranking up the smoker at around 1:00pm and there's a cast iron pot of ranch beans in the oven. Sunday dinner's in the pipe. Pasta, Tomatoes, Veggie Broth, Olive Oil, and Seasonings (details below) Throw it all in the pot, INCLUDING the uncooked Pasta, and cook! - Bring it to a boil, then reduce to a simmer. The starch leaches out of the pasta and makes a rich, warm sauce for the noodles. The other ingredients cook right along with the pasta Ingredients 12 ounces pasta (I used Linguine) Directions Place pasta, tomatoes, onion, garlic, basil, in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil. Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated – I left about an inch of liquid in the bottom of the pot – but you can reduce as desired . Season to taste with salt and pepper , stirring pasta several times to distribute the liquid in the bottom of the pot. Serve garnished with Parmesan cheese. I've made these a lot and they are really really good. do add water to them or they will get too thick. 2 pounds small white beans Soak beans over night. Drain and rinse. Simmer for 10 min. in baking soda water. Drain and rinse. Place coarsely chopped onion in bottom of a large (oven safe) Dutch oven, then half the bacon chopped, beans, other half bacon, spice mixture, water to barely cover. Cover with lid and bake for 6 hours at 300 deg., don’t stir until after the first 2 hours. Add small amounts of water if they start to dry. Do not reheat leftovers on top of stove, they will burn. doesn't add, takes away. according to my mother, her mother always said baking soda took the poop out of the beans. In other words you fart less. Don't know about that but it does take something out of the beans. It will turn the water lime green and foam up. I skim the foam several times. Nasty odor too. Make sure you rinse before baking. I've always done it and the beans are always fantastic. ok a web search says it neutralizes the acids which can also cause flatulence. it also takes some of the sugars out as does the soaking. that is not an issue with this recipe since you are baking them with a ton of sugar. I'm really, really trying to avoid sugars, but, my favorite cake is lemon poppy-seed bunt, with a drizzled-sugar glaze...simply sinful.

Ingredients: 1 1/2 C. Sugar Directions: Thoroughly spray with the stoneware of your crock pot with non-stick cooking spray and add the mixture of almonds and sugars. Cook on low ( with the lid on) 3-4 hours stirring every 20 minutes. In the last hour, add the 1/4 C. of water and stir well. This ensures a crunchy yummy coating. (*make sure after you've added the water that you continue to cook the nuts for another 45 minutes to an hour.) You have to stir really well, especially as it gets later in the cooking process. Cheesy Ham Biscuit Pull Aparts
1 egg
2 tablespoons milk
3/4 cup diced ham
1/4 cup thinly sliced green onion
1/2 cup shredded cheddar

8 potatoes
1/3 cup Olive Oil

Add potatoes, allow for excess sauce in the bowl

Mix together cheese, bacon & green onion in a small separate bowl
Once potatoes are done, add the uncooked marinated chicken
Then layer the toppings over the chicken
Bake for 15 minutes or until the chicken is cooked

CROCKPOT CINNAMON ALMONDS
1 1/2 C. Brown Sugar
3 Tbsp. Cinnamon
1/8 tsp. Salt
1 Egg White
2 tsp. vanilla
3 Cups Almonds
1/4 C. Water
In a medium sized bowl, mix together sugars, cinnamon, and salt. Set aside. In another medium sized bowl, whisk the egg white and vanilla until it’s a little frothy. Add almonds. Make sure the almonds are thoroughly coated in the egg white mixture. Add cinnamon mixture to the almonds and toss until coated.

Low Fat Crinkle Cookies
1 egg, lightly beaten
2 cups Cool Whip, thawed (8 ounce container)
½ to 1 cup powdered sugar
In a large bowl, combine cake mix, egg, and Cool Whip. The batter will be sticky!
Bake for 8 to 10 minutes, until the edges are golden. Allow to cool 1 minute on baking sheet; then remove. Please SHARE so this will be SAVED to your timeline!

I omitted the salt. Who needs salt with fish?Ingredients
Lemon butter salmon.
2 teaspoons minced garlic
1/2 cup butter, cubed
6 tablespoons lemon juice
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon hot pepper sauce
5 salmon fillets or steaks (6 ounces each)
In a small skillet, saute garlic in butter; whisk in lemon juice, salt, pepper and pepper sauce.
Transfer 2/3 cup to a serving bowl; set aside.
Place salmon in a greased 15x10x1-in. baking pan.
Drizzle with remaining lemon butter.
Broil 4-6 in. from heat 10-15 minutes or until fish flakes easily with a fork.
Serve with reserved lemon butter. Yield: 5 servings.

The Pies Have It!: easy crust and filling recipes The Winter Squash/Pumpkin pie-filling recipe says to mix the ingredients in the order given but the squash/pumpkin is listed twice, so use best judgement. Mine would be to add that last but it's listed first and fourth there. Sweet potato tip: add some almond extract.
