This was actually, despite my teasing her, farmfriend's idea, and since I am a lifelong cook who enjoys good food I thought this would be a fun perennial thread.

This is a place to share and exchange recipes, tips, sources, and treats. I am sure that there is a lot of expertise just waiting to be tapped into. I threw beverages into the title because I love a good cup of coffee and so have spent a lot of time reading about, brewing, and enjoying good coffees.

My own strong areas in cooking are baking, Tex Mex, and Italian. I do not represent myself as an expert but as a someone who simply enjoys good food and is not uncomfortable in the kitchen.

As a long time Kitchen Gardener I am used to taking what I have harvested and using what I have and trying to be a bit creative. I have also learned some of things which are fun to grow and good to have for a different touch.

Just back from a peasant meal of prime tenderloin of beef fillets, cherry tomatoes, and toasty chiabatta bread.

Since I'm the cook here, it has to be simple and easy.

Some peasant meal.

It doesn't get much easier than Pound Cake/Tea Bread. Try a French Genoise some time. I also make a killer Chocolate Sponge Cake - I do miniatures and they are just wonderful with whipped cream and Raspberry Puree on top. ;-)

Scones are easy to make yourself - they are related to Biscuits. If properly done they are flaky, tasty, and just heavenly with Scottish Marmalade. Robertson's Golden Shred or Keillor Dundee Marmalade (Trader Joe's has the best price I've found on the Keillor Dundee Marmalade - which is my all time favorite).

It's too long to type in but easy to understand. If you can find a copy of the King Arthur Flour Anniversary Cook Book it is a wonderful basic reference.

I make them with the full load of Butter and Sugar. Although if you are going to put preserves on them cutting back a little on the sugar is advisable.

Then you may like the two I mentioned. I have others on my list of resources but they are mostly the same as you've encountered - they want you to buy at least a quarter or a half.

Belle Brooke is in Texas but if I recall you're down south and I think they're up in the Panhandle.

I forget where Slanker's is but I think they might be in Texas too.

Another one, slightly more expensive because they are certified organic, is Alderspring Ranch in Idaho.

Then don't short yourself. I very rarely use refined sugar. I use for baking, and most things, Florida Crystals which is an unbleached organic natural Cane Sugar. It is still sugar so you shouldn't overindulge but it is much better than bleached flavorless white sugar.

Also for Brown Sugar I use Billington's Muscovado Sugar - which is also a semi-raw minimally processed sugar. A lot of commercial Brown Sugars are bleached and then have some of the natural molasses added back in to turn it into "brown" sugar.

Also there are other sweeteners, each with their own characteristics, which can be used in baking.

Honey

Blue Agave

Stevia (almost zero calories)

Sucanit (unrefined cane sugar)

Date Sugar - made from dates as the name implies.

Maple Syrup or Sugar.

The one thing to remember about all of these substitutes is that most do have their own characteristic flavor and so that must be accounted for in the final product. For most cakes and cookies I prefer the unrefined evaporated cane juice sugar - it adds a nice warm molasses flavor. I also use it in Bread making.

Just FYI - the King Arthur Unbleached Cake Flour worked wonderfully. I am having to restrain myself - I made a double batch and some of it I used in my 6 cup mini-bundt pan - I've eaten two so far - they were supposed to be for other people. Hee, hee. I guess I'll have to make some more. Darn. They are best wrapped up and get better after they have set a couple days - the flavors meld better and become more complex.

I missed that earlier - I guess I should have been wearing my reading glasses. No, Stevia is actually the leaf of a South American plant which is dried and then ground up. By weight it is much sweeter than standard cane sugar, has no calories to speak of, and has no known toxic side effects. Because of the big money politics of the FDA (Aspartame a.k.a. Nutra-Death is patented and verrrrrry profitable whereas Stevia is not patentable and would not yield the same obscene profits of monopoly), and their highly corrupt operations, it is not allowed to be used and billed as a sweetener. It is one of the most ghastly corruptions and aberrations of that terminally corrupt operation called the FDA - right up there with "anti-depressants".

Sun Crystals The box shown, not the bag, are in the sugar sets in all Savemarts. Top shelf with all the artificial ones. I realize it is not artificial in the sense that NutraSweet etc are but is billed as a no calorie substitute for sugar.

That may be the one I heard just a snippet on where they did a lab alteration to make it a little different and patentable. If it doesn't say specifically on the label that it is Stevia I don't know that I would trust it.

World's Best Butter Cookies

1lb Butter
1 Cup Sugar
4 cups Flour
3 Egg Yolks
1 teaspoon Vanilla

Soften butter to room temperature. In a large mixing bowl cream the butter and sugar together. Add vanilla. Then mix in egg yolks one at a time. A little at a time mix in the 4 cups of flour until thoroughly mixed.

Spoon cookie batter into cookie press. Press onto ungreased cookie sheet. Bake at 325 - 350 for 8 - 10 minutes, or until golden brown. You can also garnish with holiday colored granulated sugar before baking.

Important!!! Remove cookies from cookie sheet immediately after removing from oven!

Do not sit in front of a tin of these all by yourself, unless you can stand to gain a few pounds. :)

2 cans of biscuits, I like the blue cans (buttermilk)
3 stalks celery
1/2 cup loose chicken meat
1 small onion
1 can cream of chicken soup
1 can cream of mushroom soup (substitute w/any flavor you fancy)
Dried Parsley

1) Chop celery and onions into 3/8" bits
1a)Dump soup into large skillet with 1&1/2 cans water, start heating, stir. Add
pepper. :)
2) Mix celery/onions with chicken
3) Open up biscuit cans, take two at a time and pound into 4-inch circles.
4) Spoon lump of celery/onion/chicken mash into dough round, form into sealed
mini-pie dealie. Repeat 10x.
5) Set all in skillet from 1a with hot soup, cover loosely, cook for 20 minutes
or so.

But in April, a Department of Homeland Security report on extremism that reiterated much the same point was widely criticized by veterans groups and some conservative politicians as being unpatriotic, leading the Justice Department to retract the DHS report.

Spam and Egg McMuffin

Cut spam into thin slices, maybe an eighth of an inch thick and fry on low heat in a frying pan, turning frequently. Fry until crispy, like bacon.

Toast and butter an english muffin, cook up an over easy egg. Place egg, on english muffin, top with two slices of spam, and there you have it.

I squash the sandwich a bit over a plate, let the yolk run out onto the plate and dip the sandwich into the yolk as I eat it.

Delicious!

This is a nice Oatmeal Cookie Recipe that I picked up. Like most recipes I just have to tinker. One thing I noticed when I first made these cookies is that they were not spicy enough for my taste so increased the Cinnamon to about 1 1/2 teaspoons, added 1/2 teaspoon of Allspice, and about an 1/8th of teaspoon of fresh ground Nutmeg (a little goes a long ways - too much and it dominates the flavor).

Chewy Oatmeal Cookies
---------------------------------------------------
Beth's Spicy Oatmeal Raisin Cookies

Ingredients

* 1/2 cup butter, softened
* 1/2 cup butter flavored shortening
* 1 cup packed light brown sugar
* 1/2 cup white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground cloves
* 1/2 teaspoon salt
* 3 cups rolled oats
* 1 cup raisins (I usually add more like a cup and half - dried currants work good too)

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

3. Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

***Another tip here - I line the cookie sheet with a sheet of parchment paper and then slide the sheet of parchment paper, cookies and all, onto my cooling rack. You can re-use the same sheet of parchment several times. If you have a cake decorating store nearby you can usually buy either a large bulk roll (most economical) or pre-cut sheets that you just slap right on to the cookie sheet.

Is there any chance something like olive oil could be used to replace the saturated fat butter and shortening?

Anyone have an opinion on olive oil from Syria. Muslim storekeeper said it was ten times better than cold-pressed, extra virgin Italian olive oil which was the subject of a scandal for being "adulterated" with lower quality oils?
