Who has the best baked spare rib recipe? No, I'm not manning the BBQ. I only like to bbq skewered turtle, but I have none of that today. : )

PLEASE RESPOND ASAP!!! The babies are going in the over within 20 minutes. I'm throwing on the salt, pepper, seasoning, beer and a bit of BBQ sauce. Wrapping them in foil and throwing them in at 275 for about three hours. My intuition tells me that this will be very tasty.

This is the plan if I don't hear from a more experienced rib cooker with a better plan for the holiday meal.

PS: THANKS IN ADVANCE FOR ALL OF OUR WONDERFUL AND YUMMY IDEAS!!!

Reno. I went down and sampled some ribs at the rib cook off yesterday, but I just didn't get my fill of them from the over priced sampler. So, I figured I'd give it a try.

If you are ever in Texas, try Rudy's BBQ and country store. All the Texans here should be givin' out a whoop n holler!! Rudy's is the best BBQ on the planet, and hteir baby back ribs are ridiculously good.

Up here in Portland it's "Buster's Barbecue".

Tofu ribs ingredients

•1 lb Firm tofu

•2 T Cold pressed oil

•8 Bamboo skewers

•BBQ sauce as needed

•1 c Soy sauce (marinade)

Cooking Tofu ribs

1. Slice tofu ½" thin, marinade in soy sauce minimum 8 hours in fridge.

2. Pre-heat oven to 300°F.

3. Cut the marinated tofu slices lengthwise into 3 strips per slice.

4. Brush the tofu slices on all sides with oil and lay them, side by side, in a dish.

5. The slices should not touch.

6. Bakei for 40 minutes.

7. Remove from the oven and let cool for 5 minutes.

8. Pass bamboo skewers carefully through the width of each slice.

9. Five to six slices will fit on one skewer without touching.

10. Cover with barbecue sauce and pre-heat the broiler.

11. Broili 6 inches from the heat for about 5 minutes, turn over, and repeat.

12. The tofu can become dark but scorching will make it bitter.

I started hunting it and I finally found it. This recipe is from Southern Living magazine and I just loved the ribs made with this.

Slow-Cooker Barbecue Ribs

4 pounds bone-in country-style pork ribs
2 teaspoons salt, divided
1 medium onion, chopped
1 cup firmly packed light brown sugar
1 cup apple butter (homemade is best if you can get it or have it)
1 cup ketchup
1/2 cup lemon juice
1 tablespoon steak sauce (I use A-1)
1 teaspoon coarse ground pepper
1 teaspoon minced garlic
1/2 teaspoon Worcestershire sauce

Cut ribs apart, if necessary, and trim; sprinkle one teaspoon salt evenly over ribs and set aside.

Stir together remaining 1 teaspoon salt, chopped onion, and next nine ingredients until blended. Pour half of mixture into a 5-quart slow cooker. Place ribs in slow cooker; pour remaining mixture over ribs.

Cover and cook on HIGH for 6 to 7 hours.

If you decide to try this let me know how it turned out. We thought they were wonderful.

Looks interesting, but I don't do Soy for health reasons - even though I used to like Tofu. The problem is that Soy Beans contain naturally occuring MSG which is an excito-toxin, and about 85% of all Soy Beans grown in the U.S. are GMO. Because of pollen contamination even organic Soy cannot really be trusted as not having GMO contamination. Tofu is alright eaten occasionally but not on a regular basis.

I didn't use the foil with the sauce, but before I put sauce on. It just kills the flavor. A perfectly good rack, ruined.

I make a rub out of mostly paprika and sea or kosher salt, and lesser quantities (I never measure anything) of cayenne, cumin, garlic and onion powders not salts, chili powder and black pepper, and whatever else sounds good. I'd just sprinkle it on heavy, not saturate the whole thing with the rub, then let it set in the fridge for a few hours. Then when it's done I add sauce and let it caramelize for a bit.

WHen I first started doing that, I was worried that all of that salt would make it too salty. It doesn't.

I never had trouble with anything ever drying out. Meat is not juicy when raw. Cooking brings out the juices by dissolving some of the tissues. They're not all going to leak out unless you get stupid with a knife.

It also helps to remove the membrane before adding the rub. The easiest way I found to do that is to use a butter knife and slip it under the membrane at a corner, pry some of it loose, grab it while using a paper towel for traction, and pull it off in one motion.

Got it. Thank you. Sounds like you've done this a time or two. I try to avoid using foil all together, although I have not gotten away from it completely. I wish someone would market an aluminum free foil such as "Tin" Foil - which we often call Aluminum Foil. Tin is not as reactive or as toxic.

If you want tender ribs, try a pressure cooker sometime.

I pressure cook mine for fifteen minutes, just before they start to fall of the bone.

Then, take them out and baste them in your favorite sauce, and throw them on the BBQ for 6 to 8 minutes on each side, basting as you go to caramelize the sauce.

Also, if you don't have a pressure cooker, make a simple brine and soak your ribs for at least an hour before you put your sauce on them. This causes them to stay moist when they hit the BBQ.

Brine: 1/2 C sale, 1/2 C sugar, add fav spices (granulate garlic, red pepper, etc.). Whisk in 1 gal WARM water. Brine meat for an hour. WORKS GREAT FOR CHICKEN ALSO!

Method #3 - Place ribs in pot of boiling, seasoned water (2 bay leaves, granulated garlic, Cayenne pepper. Turn the heat down and simmer for 40 minutes, just before the ribs fall of bone or shrink off of bone tips. Take out, lay in deep baking pan, and put your fav sauce over ribs. Bake one hour.

EAT!

To tenderize meat in a slow cooker, it is cooked at LOW temps for up to ten hours, or overnight at low temps in smoker.

The settings on a Crock Pot, iirc (been a long time since I had the opportunity to use one), are low, medium and high. It doesn't get anything like 350 degrees which is what you would probably cook them at in a conventional oven. And I have actually used this recipe and it did turn out very good.

I never considered the chemical reaction with acids and aluminum. It makes me wonder about the connection of using aluminum and Alzheimers.

The liquid aminos is a good substitute for Soy Sauce (although it still uses Soy) and I like the Vinegar. Trader Joe's Organic Cider Vinegar looks identical and is about a buck a bottle cheaper. I like the vinegar for my Potato Salad - with Piquillo Peppers (which Trader Joe's also has now).

I'm always experimenting in the kitchen. Over the years I've learned a lot about what works with what - by virtue of finding out the hard way what doesn't work with what. ;-)

I never considered the chemical reaction with acids and aluminum. It makes me wonder about the connection of using aluminum and Alzheimers. I also avoid Baking Powder that uses aluminum - Rumford's does not.

One of the things common to Alzheimers patients is a high level of aluminum in the brain tissue. As a consequence I no longer use aluminum cookware and I try to avoid using foil.

THat, and the aluminum compounds used in antiperspirants. I'm not a chemist and don't know if they are harmless or not. They probably aren't harmless.

If you want tender ribs, try a pressure cooker sometime.

I pressure cook mine for fifteen minutes, just before they start to fall of the bone.

I can second this approach - a pressure cooker is a great thing, especially at our 6300 foot elevation.

Almost forgot MOST IMPORTANT part - > REMOVE THE TOUGH CONNECTIVE MUSCLE MEMBRANE OVER THE BACK SIDE OF RIB CAGE! The marinade will sink straight into the rib meat. Otherwise, it won't!

Using a round-tipped butter knife, slide it under the membrane and remove all membrane before you do anything else to the ribs.

I've looked over your recipes. I have the best of the lot. One for meaty back ribs, involving a baste of keens mustard, with a sauce of pineapple chunks and tomato paste etc. onions and green pepper, yummy.

I have another recipe for the less meaty side ribs given to me by the Chinese Amah, of my sister-in-law. It involves soy sauce, vinegar, brown sugar, spices, etc.

These recipes are too long to type here, so you will have to wait for my cookbook to come out!
