I don't disagree with most of those. Add in:

Courtesy and manners

Martial training

Education in classical liberalism (aka libertarian) thought

Analytical and logic skills (beyond what they have naturally)

Cooking

Military tactics and strategies

Western History (in a positive sense)

Mathematics and Science (beyond what they have naturally)

And guns.

"Society is, always has been and always will be a structure for the exploitation and oppression of the majority through systems of political force dictated by an élite, enforced by thugs, uniformed or not, and upheld by a willful ignorance and stupidity on the part of the very majority whom the system oppresses." -- Richard K. Morgan

Having some knowledge of farming/gardening/preserving, and animal husbandry wouldn't hurt.

Indeed, good additions. Though according to traditional roles, women would be the ones canning and gardening. The men might farm though, which is somewhat more complex and detailed.
