I uninstalled it from "add or remove programs" in the control panel and it successfully uninstalled (or so it said), however, when I attempt to open a link from an e-mail, instead of the link opening in Firefox, it opens in IE as if it were never uninstalled.

So how the heck is this happening when it was uninstalled and doesn't appear to even be on the computer? More importantly, how do I get rid of this POS program? I'm tired of fighting with it.

Has anyone else experienced this?

Microsoft claims IE is fundamental to Windows Explorer and the Desktop.

The Desktop is a special namespace extension of Windows Explorer. When they integrated IE into Windows Explorer (so you could use Favorites in Windows Explorer or display web pages in a Windows Explorer window), Microsoft claimed in court that IE could not be separated from Windows Explorer. They were trying to make the same claims for Windows Media Player but the EUros passed some laws that forced them to separate out the WMP from Windows Explorer and Microsoft suddenly discovered that they could actually separate those two. However, the EU never took action against IE the way they did with WMP. I assume Microsoft bought some EU legislators on that one, an international shakedown. And they were no doubt in a good position to demand extremely steep discounts on buying Windows for EU government desktops, a common way to shakedown Microsoft.

So IE continues to be a part of Windows, even if you "uninstall" it. Fundamentally, versions of Windows that have been hacked to remove IE don't actually remove it, they just change all of the default tools so it never gets invoked unless you try to open it explicitly. Even if you remove the iexplore.exe program, you still have all the various support DLLs for it still on your system, ready to be invoked in other ways, like through Windows Explorer hooks and callbacks.
