If you eat at least 4 grams of garlic a day, your blood pressure lowers. A daily intake of 1 clove of fresh garlic for 16 weeks lowers cholesterol by 21%. The benefits of onion and garlic are well known. Yet, we don't eat as much of these products as we used to. In his book "Hypertension - 80% without drugs" the MN Sergey Aleshin wrote about garlic and onions: "They contain a large amount of sulfur-containing antioxidants, which protect the body against free radicals damage."

Many cannot eat this product because of its pungent odor, which is caused by a particular substance - allicin - that has a strong antibacterial effect. Therefore, many drugs are produced by drying garlic. While manufacturers claim that its valuable qualities are not lost in the process, some researchers believe that such drugs have only a minimal protective effect. Only fresh garlic grown on good soil is valuable.

As for onions, they have all the healing properties of garlic, only to a lesser extent, so it should be eaten in larger amounts - an average of 50 grams per day. Aleshin: "I will note that onions, in addition, contain quercetin that protects the cardiovascular system from free radical damage."

Superfoods for hypertension

These are, above all, natural unprocessed or slightly processed cereals and legumes with a high content of calcium, magnesium, potassium, B vitamins and fiber. According to an American study, women who consume whole foods, decrease their risk of heart diseases by 25% compared to women who eat processed food. Replacement of white polished rice with whole grain products or beans for 16 weeks results in a decrease in blood sugar by 24%.

Indeed, the difference in the nutritional value of such products is high. For example, the calcium content in white wheat bread is 20 mg, whole grain breads - 43mg, boiled white rice - 2 mg, cooked brown rice - 10mg. The content of Mg is 14/74 and 5 / 43 mg, respectively, potassium - 93 / 234 and 10/43 mg, vitamin E - 1.68 micrograms in white bread and 3.8 in the whole grain bread, and 0.030 in white rice and 0.216 in brown rice.

At the end of the last century nuts have been fully rehabilitated as previously doctors did not recommend them due to high fat content. Studies have shown that those who ate nuts 5 times a week had 50% lower risk of coronary heart disease. The fat contained in nuts is predominately unsaturated and contains first class protein, fiber and phytosterols that block the absorption of cholesterol in the intestines. Nuts are also rich in the amino acid arginine that forms nitric oxide that expands blood vessels and prevents blood clotting.

Although in the early twentieth century it was considered that milk consumption leads to lower blood pressure, in the last 25 years there was a real hysteria about dairy products. They were seen as the main source of saturated fat intake and, consequently, as a culprit of high cholesterol. Recent research has not only rehabilitated the milk, but also proved that people who replaced the fruit and vegetable diet with daily consumption of 2 or more glasses of milk have shown double increase in the antihypertensive effect, as well as lowered risk of thromboembolic stroke and metabolic syndrome.

Scottish researchers who conducted a 25-year observation of 5,765 men used milk with high fat content, and did not reveal any connection between this fact and mortality from various causes, including coronary heart diseases. The advantage of fat-free products is only the fact that they can reduce caloric intake, which is important for people who are overweight.

Healing properties of milk are explained by high content of calcium, magnesium and potassium as well as low sodium content. Milk also contains protein casein, which is capable of lowering the level of the strongest factor of atherosclerotic lipoprotein A. Aleshin proposes to take into account the fact that some people are intolerant to milk, so they should not use this method of prevention.

This shows that certain foods can reduce blood pressure preempt the development of the disease.

I heard (years ago from somewhere) that by eating garlic regularly, you will lose the smell of garlic on your breath. I have never tested the theory, but the smell of garlic on the breath of many French and Italian acquaintances seem to disprove it.

Either way, garlic itself will never lose its pungency.

This reaction reduces blood pressure and in doing so increases the oxygen going to various parts of the body especially important for vital organs while reducing the pressure on the heart. These results added to findings earlier this year by researchers from the Albert Einstein College of Medicine, that hydrogen sulphide actually prevented heart muscle damage in the event of a heart attack.

At high concentrations, hydrogen sulphide is actually poisonous but our body produces it’s own supply. However as age advances, Hydrogen Sulphide production dwindles.

Dr David Kraus, Ph.D., a UAB associate professor in the Departments of Environmental Health Sciences and Biology and the study’s lead author said, "Our results suggest garlic in the diet is a very good thing. Certainly, in areas where garlic consumption is high, such as the Mediterranean and the Far East, there is a low incidence of cardiovascular disease. It is, however, important to know that large amounts in supplement form may interact with blood thinning drugs and could increase the risk of bleeding."

The fresh garlic used in the study was the equivalent of eating two cloves of garlic, possibly more than most people unless you live in the Mediterranean and the Far East where it is used extensively in cooking.

Dr. Kraus suggested that before cooking with fresh garlic, let it stand for 15 minutes after crushing as this triggers the enzyme to boost the healthy components of the garlic and so increase the health benefits.

China has been having major problems with milk production:

BEIJING — Three babies have died and 36 people -- mostly children -- fallen ill in China after drinking possibly tainted milk, the government and state media said on Friday, in the country's latest food scare.

A preliminary investigation showed that the victims in the city of Pingliang in northwestern China suffered nitrite poisoning after drinking milk, a local government statement said. The children died on Thursday, it added.

The case is another black eye for China's scandal-prone food industry and its government regulators, who are still struggling to lay to rest a huge 2008 tainted-milk scandal that killed at least six babies and sickened 300,000.

Nitrite is a chemical used to make dyes and to preserve meats. According to the US Centers for Disease Control and Prevention, nitrite poisoning can result in nausea, dizziness, respiratory distress, loss of consciousness and seizures.

Two suspect dairy farms have been shut down and are being investigated, according to the statement from the government of Pingliang, which is in Gansu province.

The official Xinhua news agency said the three dead were infants, while those who became ill were mostly under 14 years old.

The government statement said one of those who fell ill was in serious condition.

The 2008 scandal was caused by milk tainted with the industrial chemical melamine, which had been added to give the appearance of higher protein levels but which can caused kidney stones and eventual kidney failure.

The scare rocked the Chinese dairy industry and led to global recalls of suspect products.

It also prompted a government safety audit of dairies nationwide. Earlier this month, China's product-quality watchdog said nearly half of dairies were ordered to stop production as a result.

Authorities had said in 2008 that all of the contaminated products had been confiscated or destroyed, but melamine-tainted dairy goods continue to reach the market.

Last July, authorities said they had found 25,000 tonnes of tainted milk powder earlier in 2010.

Zhao Lianhai, the father of a child victim who became a campaigner for families harmed by melamine-tainted milk, released a video on YouTube this week urging more government action to address the health impact of the 2008 case.

"I know that many more children are experiencing poor health and that the health situation for many children is growing more severe," he said.

"We hope authorities can take real steps, and try new measures, to deal with all of these problems."

The government has feared letting the 2008 scandal become a source of public unrest. Zhao, 38, was sentenced to two and a half years in prison last November but freed a month later on medical parole.

He said in an interview with Hong Kong's South China Morning Post published this week that he was force-fed through the nose with China-produced milk while he was on hunger strike to protest against his jailing.

Product-quality scandals are common in China.

Last month, the country's largest meat processor was forced to apologise when clenbuterol was found in some of its pork products. The illegal additive can lead to dizziness, heart palpitations and profuse sweating.

Other recent scandals have involved contaminated red wine, bleached mushrooms, fake tofu, recycled cooking oil, and toys containing toxic paint.

Take a clump of fresh ajy y cebolla, cut the top of the stalk off, drizzle with olive oil, sprinkle with sea salt, and pop in the oven for 20 minutes @ 400F. Delicious on salad, bread, or with olives, cheese, and wine.
