I recall hitting a big doe with the snow plow back in Illinois. I called the foreman over and we decided she was dead, so we threw her up on the tailgate of the pickup and drove over to the gravel pit. I pulled her off in a clean bank of snow and cut off the hind quarters. I ran the rest of the night with the heat off, then put them in the refridgerator and aged them for three days. I gave one to the neighbor and he cooked up some stew and gave me a plate of it. The other one I took to the yard. We had a guy there who used to be a butcher. He said it was perfect, so we cut it up and fried it up on the stove. Good eating. ;)

Too many people don't age venison. The standard is 3-5 days in the mid-to-upper 30's. Another method is to age it until rigor mortis goes away and the muscles relax on their own.
