This soup is soooooo good I had to share it. You can turn it into a stew by adding more of the veggies and chicken if you so wish. I may do this next time.
1.5 cups chopped onion
6 stalks celery, chopped
3 carrot, diced
1 sweet potato, chopped
1 bunch parsnips, chopped
1 turnip, chopped
3/4 cups coconut oil
4 1/2 tablespoons all-purpose flour
2 1/4 teaspoons red curry powder
2 1/4 teaspoons yellow curry powder
12 cups chicken broth
1.5 apples, cored and shredded
3/4 cup white or brown rice
3 skinless, boneless chicken breast half - cut into cubes
salt to taste
ground black pepper to taste
3 pinches dried thyme
1.5 cups coconut milk
1. Saute onions, celery, carrot, potato, parsnips, turnip and coconut oil in a large soup pot. Add flour and curry, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.
2. Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.
3. When serving, add coconut milk.
