When I worked for the State of Illinois, I hit a deer with the snowplow. It was a big doe. By the time I got turned around and back there, she had her last gasp. I called the foreman over and we threw her up on the tailgate of the pickup and drove over to the gravel pit. I pulled her off in a clean bank of show and cut off the hind quarters. I ran the rest of the night with the heater off and took them home and aged them in the fridge for three days. I gave one to the neighbor and he cooked me up a plate of stew. The other I brought into the yard. We had a guy there that used to be a butcher. He said it was perfect. We cut it up and fried it up on the stove. Good eating. ;)
