The secret to the Mediterranean diet may be in the salad.

Eating unsaturated fats, like those in olive oil, along with leafy greens and other vegetables creates a certain kind of fatty acid that lowers blood pressure, scientists said Monday.

These nitro fatty acids are formed when consuming spinach, celery and carrots that are filled with nitrates and nitrites, along with avocado, nuts and olive oils that contain healthy fats.

Nitro fatty acids appear to inhibit an enzyme known as soluble epoxide hydrolase, which regulates blood pressure, said the research in the Proceedings of the National Academy of Sciences, a peer-reviewed US journal.

The study was based on experiments in lab mice, and was funded by the British Heart Foundation.

"The findings of our study help to explain why previous research has shown that a Mediterranean diet supplemented with extra-virgin olive oil or nuts can reduce the incidence of cardiovascular problems like stroke, heart failure and heart attacks," said Philip Eaton, professor of cardiovascular biochemistry at King's College London.

While most experts agree that the Mediterranean diet -- which consists of lots of vegetables, fish, grains, red wine and fatty nuts and oils -- brings health benefits, there has been little scientific consensus about how or why.

Some have touted red wine as a driving force behind the ability of Europeans to eat high fat cheeses and meats while maintaining better overall health than Americans.

But research published last week found that a key antioxidant in red wine, resveratrol, did not help people in Italy live longer or avoid cancer or heart disease.

Fresh oils are best and many oils sold are tainted because of long shelf life and using clear glass and plastic bottles to retail oils. Oils are degraded with light, air, moisture and heat. Also, fresh greens, are better for eating than less fresh greens. Many foods have antioxidants and unsaturated fats. Do not over heat oils, as they lose their essential nutrient properties with high heat.+0

Much of the US population has become largely immobile due to the "conveniences" offered by the companies to avoid walking or thinking, etc, etc.: online shopping, internet, cheap food, etc., etc. Based on my work and research, the oil also binds a lot of organic compounds and helps cleanse the body/blood, thus lowering the blood pressure. I use the oil a lot to remove chlorinated compounds, pesticides, etc from the water because the oil has a strong affinity for other organic compounds. The folic acid in the nuts also helps immensely. I used to have high blood pressure (140/90), but when I started eating nuts and oils and vegetables, my pressure went down to 120/80 despite being 40 pounds overweight. Since then I have been advocate for these types of foods. Avoid medications and start eating healthier foods. No preservatives, please.+27-2

[44B] Understand this please, Olive oil is not good for you, It is, however less bad for you than most other oils. Vegetables will lower Blood Pressure. The Chinese have used Celery for that purpose for over 4000 years, and even though it is high in sodium, it does work-2

We also maintain a very active life style. But in the end, 75% of it comes from your DNA sequence. Either you have it or you don't. +4

Donald Olive oil is an Anti-Inflammatory. I have had bad knees for years. I make a green smoothie with spinach,2 table spoons of olive oil, a table sp. of cocoa also Anti-Inflammatory, 1/4 teasp. of Turmic with some fruit as sweetener, and almond milk as a liquid. Without it I'm using 100 mg of Ibuprofen just to go to sleep.+1
