but as I learn more about baking, Im realizing theres another word to think about: Fat. Just about every recipe I see calls for a huge amount of butter or oil
and that means a whole lot of triglycerides your body just doesnt need. So I asked my wife for some help, and we came up with these 5 great butter replacements: 1. Unsweetened Applesauce Great in sweet/cakey things like brownies & muffins, applesauce lends a pleasantly chewy texture to your baked goods. All you have to do is replace the oil or butter with the same amount of unsweetened applesauce
. So if your recipe calls for ½ C of butter, you replace it with ½ C of applesauce. Bonus: fruit have natural sugars in them, so when using them as a replacement you can use less sweetener in your recipe. 2. Mashed Banana Like applesauce, banana is a good replacement for oil in sweet recipes. Its not a straight-forward 1-for-1 replacement though, so I consider this an advanced-replacement
start with ½ as much banana as the recipe calls for (ie: ¼ C Banana replaces ½ C Butter or Oil). If your batter looks too dry, add a bit more banana. 3. Avocado Puree As strange as it may sound, avocado makes an absolutely delicious replacement for butter. Best of all, this is one of the only butter replacements that can be used in cookies. And just like applesauce, it can replace butter 1-for-1
which means if it calls for 1 C, you use 1C (no calculations needed). Bonus: you can also use avocado puree to replace butter & mayo for toast & sandwiches. 4. Ground Flax Create a paste out of ground flax & water for the perfect oil replacer, great for savory baked goods like bread and rolls. I love this one because it adds a nice nutty flavor & tons of added nutrients. To replace 1 TBSP of oil, mix 3 TBSP of ground flax with 1 TBSP of water. To replace ¼ C of oil, mix ¾ C of ground flax with ¼ C water. (You can either grind flaxseeds yourself, or buy ground flaxseed at any health food store or online retailer.) 5. Low-Fat Greek Yogurt If you dont mind eating dairy, this is a great 1-to-1 replacement for butter that adds a little extra protein to whatever youre baking. This is good for sweet or savory items, but can add a little too much moisture to your recipe
so you might want to reduce your liquids by about ¼ cup when using this as a replacement. So the next time youre baking something for a special occasion, try making one of these swaps. Itll help you cut calories while avoiding cholesterol-raising triglycerides
