Minutes to Prepare: 10
Minutes to Cook: 60
Number of Servings: 12

Ingredients

1 package frozen Potatoes O'brien, thawed
1 pound roll of breakfast sausage browned and crumbled
1 cup, more or less, shredded sharp cheddar cheese
8 eggs, beaten
1 cup of milk

Directions

Lightly spray 9x13 inch pan with Pam. Cover bottom evenly with potatoes. Top with cooked, crumbled sausage, then cheese. I like to mix the cheese into the potato-sausage just so it's not laying on the top in layers, but gets down into the potatoes and sausage. Add the milk to the eggs in a separate bowl and beat until well-mixed. Pour over the Potato-sausage-cheese.

Bake uncovered for about an hour or until the eggs are firm and the casserole holds together.

Serving Size: makes 12 3x3.25" squares

Number of Servings: 12

Poster Comment:

I made this today. I added a teaspoon of sea salt to the milk and eggs before I poured that on top of everything else. And I found that cooking it for 50 minutes in a 350 degree oven worked ok. The recipe didn't include the temperature so I guessed at that but most casseroles I know anything about are cooked at about 350.

A can or two of well-drained original Rotel and you're really good to go.

Now I'm hungry...

It's not bad with ketchup either.

Maybe a coincidence, but I just bought a 2 lb bag of frozen potatos O'Brien. Tossed about 1 cup (8oz) into a skillet with a diced onion, a whole diced red pepper, and about 1/4 lb of sweet Italian sausage. It is smelling very good right now, I have to resist the urge to blast the whole concoction with black pepper.

Whoa!

Black pepper and curcumin are our friends; use liberally...to taste.

Time for me to head to the kitchen.

"Breakfast" is great any time of the day.

Black pepper is the only acceptable substitute for Louisiana Hot Sauce, which causes brain tumors I read somewhere.

LOL, sorry Loddy, I'm in a pissy mood tonight. One tagline from Countenance Blog that always stuck with me was "Everything Is Either Racist or Causes Cancer."

I can't bear the thought of Louisiana Hot Sauce being racist.

Probably should brown and drain the sausage a little before adding to taters. Or use more taters... :)

Tasted great, but a little on the wet side.

Yeah, good idea to brown the sausage some and drain it/crumble it.

Empirically, coonasses cannot be ray-cists...they just can't.
