Ingredients

1 package frozen Potatoes O'brien, thawed
1 pound roll of breakfast sausage browned and crumbled
1 cup, more or less, shredded sharp cheddar cheese
8 eggs, beaten
1 cup of milk

Directions

Lightly spray 9x13 inch pan with Pam. Cover bottom evenly with potatoes. Top with cooked, crumbled sausage, then cheese. I like to mix the cheese into the potato-sausage just so it's not laying on the top in layers, but gets down into the potatoes and sausage. Add the milk to the eggs in a separate bowl and beat until well-mixed. Pour over the Potato-sausage-cheese.

Bake uncovered for about an hour or until the eggs are firm and the casserole holds together.

Serving Size: makes 12 3x3.25" squares

I made this today. I added a teaspoon of sea salt to the milk and eggs before I poured that on top of everything else. And I found that cooking it for 50 minutes in a 350 degree oven worked ok. The recipe didn't include the temperature so I guessed at that but most casseroles I know anything about are cooked at about 350.

Maybe a coincidence, but I just bought a 2 lb bag of frozen potatos O'Brien. Tossed about 1 cup (8oz) into a skillet with a diced onion, a whole diced red pepper, and about 1/4 lb of sweet Italian sausage. It is smelling very good right now, I have to resist the urge to blast the whole concoction with black pepper.
