Indeed, organic gardening is the best way to approach proper nutrition in the human body.

The chemical fertilizers used today have depleted the organic content of the soil.

Believe it or not, I had a beautiful large garden in the back yard of the house in Chicago. I brought a home grown cabbage over to my Aunt. She made Cole Slaw. She told me later the kids were eating it and asked what it was. She told them, "Cole Slaw." They couldn't get enough of it. Slaw from a fresh cabbage is a lot different than from one which has been in cold storage a few months or more. ;)

False.

Over-farming the land, year after year, no crop-rotation, and other (what we now realize) were bad farming practices deleted and depleted most soils' organic nutrients over time.

This is true for the most part. Farmers learned to rotate crops such as corn and soybeans. The beans would help to put nitrogen back into the soil.

But I had a large garden in the back yard of the house we lived in Chicago. I used a Troy Bilt tiller on it and tilled in sand and other organic matter including leaves and crop residue to lighten and aerate the heavy clay soil.

I brought a home grown cabbage over to my Aunt. She made Cole Slaw. She told me later when the kids were eating it they asked what it was. She told them, "Cole Slaw." They couldn't get enough of it. Slaw from a fresh cabbage is a lot different than from one that has been in cold storage a few months.

I was also doing custom roto-tilling jobs and soil testing too. I made some good money doing that and had a lot of work. (I never reported any of the cash I made either.) Once in a while I would get a complaint from someone who thought they should have their plot done while I was in a particular location. I told one guy I had ten jobs scheduled at James Park gardens the next day where there were about 100 20 x 20 garden plots. And I would be more than happy to come back at a later time, though I do not recall if I did his plot or not. ;)
