I have to freeze my bread. By the time I got to the 4th or 6th slice, it would be moldy crouton slices. A deep freeze (non self-defrosting) is best. I've heard you're not supposed to refrigerate bread, probably because it dries it out.

One thing Dr. Mandell failed to mention is that refined commercial white bread contains phytates. These cause the uptake of calcium to be reduced and this could lead to bone loss. That has got to be a big problem especially for women and osteoporosis.
But bone breakage is a big problem for many as we age. I know an older guy that fell and broke his hip. The VA put a Titanium rod from his hip to his knee. Lucky he had his time in the service to cover that expense. ;)
