I'm having a hard time figuring out what to cook for Doc. I know better than to text her and ask what she wants. Maybe I should wait 'til she gets here. IIRC, she wasn't much in the mood for eating last weekend. She paid for that Saturday. Good thing she's banging a professional hangover medic.

She should be happy with her flowers from last weekend anyway. They had several of these two, two and a half inch green pods that turned into big pink four to five inch tropical flowers. That's the best batch I think I've ever gotten her. Not bad for twelve bux.

Now we'll see if she believes my glitter story. Fortunately, I still have the evidence in the garage.

Spinach Quesadillas

Dump chopped onions in a pan, cook for a bit
Dump on a bag of fresh spinach, cook for a bit

Scoop out

Throw flour tortilla in pan
Dump spinach/onions on tortilla
Toss in some Pepper Jack

Cook for a bit Fold

Cook for a bit

serve
