Perilla Oil vs Olive Oil Perilla oil is significantly richer in omega-3 fatty acids, particularly alpha-linolenic acid (ALA), compared to olive oil. It contains up to 60% ALA, making it one of the richest plant-based sources of omega-3, whereas olive oil contains less than 1% omega-3. This difference translates to perilla oil having up to 60 times more omega-3 than olive oil.
A randomized controlled crossover study found that consuming perilla oil led to a significant increase in ALA levels (from 31.6 ± 10.32 to 67.93 ± 24.35 µg/mL, P = 0.001) and a significant decrease in the ratio of low-density lipoprotein cholesterol to high-density lipoprotein cholesterol, suggesting a potential reduction in arteriosclerosis risk.
The study also reported no adverse effects related to perilla oil consumption.
Perilla oil's high content of unsaturated fats makes it highly sensitive to heat and light, causing it to become rancid quickly. Therefore, it is recommended to use perilla oil raw or as a finishing oil, not for cooking at high temperatures, as heating can destroy its beneficial nutrients and potentially create harmful substances like trans fats and benzopyrene.
