It's long been known that herbs and spices are rich in antioxidant phenols, but reaserach at the University of Georgia suggests that these phenols also lower blood sugar levels and restrict the formation of compounds that contribute to the inflammation and tissue damage associated with aging and diabetes. The cloves and cinnamon tested had phenol levels that were 30 and 18 percent of dry weight, while oregano and sage were at 8 and 6 percent. Blueberries, in comparison, although rightly lauded as a good source of antioxidant phenols, contain about 5 percent by dry weight. Not only will the medicinal value of a meal be greatly enhanced with a variety of herbs and spices, but the side-effects often accompanying drugs are nil, as thousands of years of usage have proven.
