Here's a Kenyan Goat BBQ Recipe:

Roast Leg of Goat
Ingredients (8-10 servings)
5 lbs leg of goat
5 garlic cloves
½ cup soy sauce
2 tbs corn oil
1tsp dried rosemary
Pinch of salt and ground black pepper

Score the goat and insert the garlic cloves in the meat. Mix the remaining ingredients and rub the meat thoroughly with this marinate. Let it stand covered for a several hours. In an oven heated to 375°F Roast, roast the meat for 2½ hours. Brush often with marinade. You may also roast or barbecue the meat on a grill but brush often with the marinade.

Kariokor Nyama ya Kuchoma

600g goat, cubed into 3cm dice 
80g coarse salt
2 tbsp coarse black pepper
1 tbsp red chilli flakes
2 tbsp sugar
1/2 tsp ground ginger
1 tsp garlic powder (optional)
1 tsp onion salt (optional)

Food safety

In Kenya food and drinks should always be treated with some consideration. Tap water is never safe in Kenya. Always drink bottled water, which can be bought throughout the country in sizes between 0,20 and 5 litres. Be aware that there are less refridgerators in Kenya than in North America or Europe, and many people in Kenya don’t use the same standards of hygiene when handling food.

Meat, fish, eggs, and to a lesser extent dairy products and anything that isn't cooked or baked is riskier than other cooked products (rice, potatoes, vegetables, etc.) This also goes for "fresh" fruit cocktails, et cetera. Better take soft drinks, bottled water, tea or coffee (especially when the water was really boiled).

Tusker and White Cap beers (which are brewn in Kenya) are safe, and are available troughout the country. But drink local beers, called muratina, at your own risk. It's good to have some medication with you for stomach problems, etc. As stated above - this is not to say that you shouldn't eat at all in the cheaper restaurants, but always use some common sense.
