Would he be held in custody during the appeals process?

You are absolutely right. They will have anti Trump judge that doesn't give a wit about the law. And, don't be surprised if the appeals court is the same. Likely, they will ignore every appealable issue and return the appeal with one word: DENIED. Trump may have to appeal again to higher court. And, by then the election is over.
